Minamo

Expanding the possibilities of Bimi Tanrei.
That is the spirit of play.
Aroma, umami, finish,
the time spent savoring,
the changing times.
Listening closely, sensing the times, following our curiosity.
We turn the idea of
"that's just how sake is" slightly on its head.
Together with our retail partners,
we imagine, "Wouldn't it be great if there were a sake like this!"
and create and
nurture it together.
Imagine the moment you taste minamo:
"I didn't know sake could be like this!"
—the surprise, and the joy of savoring it.

Sosai Junmai

A modern junmai with juicy fruit and refreshing brightness

Rich, banana-like fruit fills the mouth with a fresh juicy flavor. Gentle effervescence heightens the freshness, and when served chilled, the acidity tightens the palate. The sweetness and umami of rice come through clearly for a lively impression, and the pleasant lingering finish invites another sip.

Honjozo

A new-generation Niigata honjozo with fruit and lightness

A luscious aroma reminiscent of ripe melon rises gracefully, and on the palate the fruit grows even richer. The flavor is clearly defined with lively acidity and a hint of bitterness tightening the whole. A modern expression of fruitiness and drinkability—a "new-generation Niigata honjozo."

Brewer's Notes

Koji adds umami, and careful fermentation control brings it to a clean, dry finish. Bottle storage, in-bottle pasteurization, and retained effervescence then deliver the crispness and flavor of honjozo in the best possible condition.

The Minamo Commitment

Just-brewed flavor, handled with care.

All minamo sake is pasteurized in the bottle using a pasteurizer. Heating the sake after bottling reduces the risk of flavor changes and oxidation, delivering it as close as possible to how it tasted when brewed. minamo is committed not only to pursuing new flavors, but also to carefully protecting them.

Beyond Bimi Tanrei, with more freedom

minamo begins with Bimi Tanrei, the flavor philosophy Yoshinogawa values, but it is not bound by it. When the taste we seek calls for something different, we are willing to step beyond that framework. By embracing new techniques and new approaches to sake-profile design, we keep pursuing flavors that do not yet exist.

Growing flavors together with sake shops

minamo values dialogue with authorized retailers who share our passion for sake. Rather than brewers deciding everything alone, we exchange perspectives and ideas with sake shops who are close to drinkers, exploring new flavors and new possibilities for sake together.

Behind the Flavor

  • 四季醸造

    Year-Round Brewing

We have created a brewing environment that is not dictated by the seasons, allowing us to brew throughout the year. By carefully controlling temperature and fermentation, we consistently achieve the flavor and maturity intended for each sake. This approach supports the clean character that defines Yoshinogawa and the gentle flavor that pairs so naturally with food.

  • 酸化防止

    Oxidation Control

Sake gradually changes in aroma and flavor when exposed to air. At Yoshinogawa, we have installed equipment that minimizes contact with oxygen after pressing and during transfer, protecting the delicate flavors and clean, clear character of our sake. It is our way of preserving just-brewed quality right up to the moment you drink it.

  • 瓶貯蔵

    Bottle storage

Keeping bottled sake cold slows changes in flavor and helps it reach customers in better condition. Yoshinogawa has expanded refrigerated bottle-storage capacity to as many as 300,000 bottles, carefully protecting the balance of aroma, umami and finish while minimizing heat and oxygen exposure.
