We stored the items in snow!
The time for "snow storage" has arrived again this year.
"Snow storage," as the name suggests, is a method of storing alcohol in snow.
This traditional storage method, unique to Nagaoka, a heavy snowfall region, essentially creates a natural freezer.
Because there hasn't been much snow from the end of last year to this year, I wonder if we'll be able to store the snow safely.
There were some concerns, but the cold snap last weekend quickly brought the area back to its usual "snowy" state.
As you can see, we were able to easily secure enough snow for storage.
All of us employees are relieved.
The entire tank is buried almost entirely by hand.
To ensure the snow doesn't melt until spring, it becomes heavy and difficult to shovel.
I put a lot of force into it.
The sake stored in the tanks is the raw sake of the "freshly pressed new sake" that was released from the brewery last month.
Thus, it was slowly aged at a low temperature for about four months until mid-May.
These will be released as "Snow-Aged Ginjo Sake" and "Snow-Aged Junmai Sake."
This is a popular product available for a limited time and in limited quantities, and it sells out in about a month and a half after it leaves the warehouse.
The taste changes gradually with subtle changes in the outside temperature, and it is different from when it was freshly pressed.
Another characteristic is that you can enjoy a different kind of individuality.
Drinking while imagining snow in the slightly sweaty season is a little time travel.
The beauty of the snow falling softly and the quiet, cool air...
We hope you enjoy it while imagining a snowy country.
We will announce it again on the blog once it is released from storage.
Please wait a little longer until then.
