People of Yoshinogawa

Yoshinogawa

Representative Director: Yuki Minemasa

What I value most is ensuring that Yoshinogawa is passed on to the next generation in a secure and reliable manner. The decision to re-evaluate a product that has been loved for so long and to fundamentally change everything from the quality of the sake to the facilities is by no means easy. Nevertheless, I believe that in order to leave behind the sake we serve every day for the future, we need to be prepared to change when the time is right. Rather than moving forward alone, I believe in the strength of our employees, and we will transform each of their experiences and feelings into a single force. My role is to create a new Yoshinogawa together with everyone.

Brewery owner Masashi Kawakami

When I returned to Yoshinogawa, the first place I stood was the sake brewing site. Working alongside the brewers, sweating it out and engaging in sake brewing and product creation, I came to know the sincerity of the people who work there. I became convinced that with these colleagues, we could become an even better brewery. That conviction is what drives me today. My goal is to create a brewery that everyone who works at Yoshinogawa, everyone who drinks Yoshinogawa, and the people who live in this community can be proud of. I want to make Yoshinogawa a place where not only do we make sake, but everyone involved can feel, "I'm glad I'm here." I will continue to take on challenges with a bright outlook towards that future.

Brewery owner Mai Kawakami

Master Brewer: Shoji Fujino

What I value most in sake brewing is not overlooking the daily changes and listening carefully to what the sake is telling me. Rice, koji, and yeast may look the same, but their characteristics change slightly from year to year, and even from day to day. While building upon the techniques and experience that have been passed down, I also incorporate new sake design and equipment as needed. My goal is to create a glass of sake that embodies the Yoshinogawa style of "delicious and light," in its best possible state. I will continue to face sake head-on.
