September Weekend Dish: Deep-fried Pacific Saury and Pumpkin with Tomato Sauce
As September begins, the weather is gradually getting cooler.
As we begin to feel the signs of autumn, Yoshinogawa is also preparing for sake brewing.
Now, regarding this month's NST Smile Stadium "Weekend Dish,"
First of all, I have an announcement to make to everyone.
This segment has been running for seven years since 2010,
This will be the final episode.
The broadcast will air on September 9th. It will be broadcast from Harashin Kawasaki store.
The final dish is made with saury, a seasonal autumn ingredient.
Let me introduce you to "Deep-fried Pacific saury and pumpkin with tomato sauce"!
<Ingredients/For 2 people>
・Pacific saury: 1 fish (filleted into three pieces)
Pumpkin: 100g
A small amount of basil leaves.
• Parmesan cheese: a small amount
・Rice flour: appropriate amount
• Salad oil: appropriate amount
<Combined seasoning>
- Toji's Evening Drink: Honjozo (premium sake): 1 tablespoon
Ginger juice: a little / Salt: a little
<Tomato Sauce>
• Tomato (small): 1 (finely chopped)
・Ketchup: 1 tablespoon
- Toji's Evening Drink: Honjozo (premium sake): 1 tablespoon
Salt: a pinch
<How to make>
① Cut the saury into three pieces, coat with the mixed seasoning, and then sprinkle with rice flour.
② Cut the pumpkin into 5mm thick slices, leaving the skin on.
③ Heat a generous amount of oil in a frying pan, and stir-fry the basil, then ② and ① in that order.
④ Put the tomato sauce ingredients into a bowl, mix, cover with plastic wrap, and microwave for 2 minutes.
⑤ Place ④ on a plate, top with ③, and sprinkle with grated cheese.
And that's it!
The perfect pairing is "Toji no Banshaku Honjozo Yoshinogawa," which was relaunched in July!
Brewed with the sake-brewing rice "Gohyakumangoku," this sake boasts a crisp yet rich flavor, finished with a Western touch.
It goes perfectly with saury and pumpkin!
