"Storage in snow" is, as the name suggests,雪This is a method for storing alcohol.

This traditional storage method, unique to Nagaoka, a heavy snowfall region, essentially creates a natural freezer.

We had a particularly heavy snowfall this winter.

It's difficult to live in, but this snow is a blessing for this snow storage.

The snow storage was carried out in January of this year.

The entire tank will be buried using heavy machinery and manual labor.
To ensure the snow doesn't melt until early summer, it becomes heavy and difficult to shovel.
I put a lot of force into it.

The sake stored in the tanks is slowly aged at low temperatures for about 100 days until mid-May.
It becomes pleasantly smooth and rounded in texture.

The taste changes gradually with subtle changes in the outside temperature, and it is different from when it was freshly pressed.
Another characteristic is that you can enjoy a different kind of individuality.

These "Snow-Aged Ginjo and Junmai" sakes, released from the cellar in this manner, are available for a limited time and in limited quantities.
This is a popular product that sells out in about a month and a half after its release.
