The 22nd edition of [Izakaya Nonta] x Snow-Aged Ginjo Sake

July has begun. In Nagaoka, we are still experiencing rainy season weather.

We've gotten used to wearing masks, but it's tough to keep them on in this hot and humid weather, isn't it?

So, that's the July edition of "Tipsy OneDish".

I visited restaurants and bars in Niigata Prefecture.

This is a segment where we'll be offering snacks that pair well with Yoshinogawa sake.

This 22nd installment will be held in Nagaoka City"Izakaya Nonta"To Mr.

Thanks for having me!

This year marks our 21st year in business!! We were located in front of Nagaoka Station for 18 years, and moved to Tonomachi in Nagaoka City two years ago.

Hanshin TigersThis izakaya (Japanese pub) is famous as a place where fans gather.

The owner, who comes from a Chinese culinary background, prepares dishes using mainly local ingredients.

They offer a wide variety of dishes, including Japanese and Western cuisine with a Chinese twist.

You can eat and drink to your heart's content and have a great time! And importantly, virus prevention measures are in place, so you can relax and enjoy yourself!

Some items are available for takeout.

Now, the alcohol we'll be pairing with this time is the same as last month."Ginjo sake aged in snow"。

This is a seasonal sake that is brewed in winter, buried in snow in its tanks, and shipped in early summer.

We asked Mr. Meguro, the owner, to prepare dishes that would pair well with this sake!

[Item 1]
"Lightly stir-fried broccoli, shrimp, and clams with salt, served with tomatoes"

★Recipe★
Broccoli: 1 head (Don't throw away the stem, as it's an important part of the dish)
Clams: 1 pack
• Raw peeled shrimp: 3-4 pieces
・Leek: 1

• Tomato: 1
• Salad oil: appropriate amount
Sugar, salt, potato starch, umami seasoning: a small amount

Sesame oil: a drizzle
・Sake: Appropriate amount

Ice water: appropriate amount

★Process★
1. Cut the broccoli into bite-sized pieces the same size as the clams, and remove the stem as well.

Boil them in boiling water with a pinch of salt.

Boil for just 2-3 minutes, or until lightly cooked. After boiling, cool in ice water.

2. Soak the clams in saltwater to remove the sand, then cover them with aluminum foil and steam them in sake and water. (Sake 1 : Water 1)

Once the clams open, turn off the heat. Don't discard the soup.

3. Cut the green onions into pieces about the same size as the clams.

4. Sauté the peeled shrimp, which have been seasoned with umami seasoning and salt, and then coated with potato starch.

5. Add salad oil to a heated frying pan, sauté the green onions and broccoli, then sauté the clams and shrimp together.

Add sake and the broth from steaming the clams, then season with umami seasoning.

Thicken with potato starch, add a drizzle of sesame oil, and it's done!

Broccoli and clams are good for the liver, so they pair perfectly with alcohol.

You can enjoy a variety of textures, from plump and crunchy to crisp.

The delicious flavors of clams and shrimp blend nicely with the broccoli.

A clean and crisp taste"Ginjo sake aged in snow"That's the best combination!

Also, on this day, they said, "We got some good sardines."

"Sardine tataki with pickled plums"They made it for me too!

Refreshing dishes for summer.

Made with pickled plums and fresh sardines.

Seasonal sardines are minced and served with pickled plums, ginger, green onions, and perilla leaves.

This also makes a great accompaniment to alcohol. It pairs especially well with chilled, snow-aged ginjo sake!

• Lightly stir-fried broccoli, shrimp, and clams with salt, served with tomatoes: 680 yen (original menu item)

- Sardine tataki with pickled plums: 580 yen (Available only during the summer season)

The owner is a very friendly person and will accommodate customers' requests.

They'll take your requests for Japanese, Western, or Chinese cuisine!

Please come visit us not only at home but also at our store!

The details of this event will be broadcast on NST's "Smile Stadium" on July 11th (Saturday) at 6 PM!
