28th Edition: [Bincho Kushiyaki Torikou Ken-o Branch] x Carefully Selected Dry Sake (Warm Sake Version)

Happy New Year!

2021 has begun. In Nagaoka, things are quite different from last season.

We are experiencing heavy snowfall.

This year too, we hope you will enjoy wonderful restaurants and Yoshinogawa sake.

The first shop to be featured this year is,

This is "Bincho Kushiyaki Torikou Ken-o Store," a yakitori restaurant that uses "Saisaidori" chicken from Iwate Prefecture!

This shop is celebrating its 8th year this year.

This is a stylish shop that's popular with women.

And the female store manager, Ms. Yokozawa, recommends:

You can enjoy approximately 50 different kinds of skewers. While quantities are limited, you can also enjoy rare cuts of meat!

Saisai Chicken has three distinctive features.

Reason 1: The chicken meat has less of an odor because it is raised on feed that does not contain animal protein.

Point 2: Because of its low fat melting point, it retains a soft texture even when cooled.

Point 3: It is highly nutritious, containing large amounts of vitamin E, linoleic acid, and linolenic acid.

*Chicken breast and thigh tend to be low in calories, high in protein, and high in vitamin E. (Compared to the Fifth Revised and Expanded Standard Values of Food Composition in Japan)

The sake I recommend this time is Yoshinogawa's standard sake,Gensen Karakuchi"of

Enjoy this as a warm sake, perfect for this cold season!

Yoshinogawa's standard sake, "Selected Dry Sake,"

We received the gold prize in the "Value-for-Money Hot Sake Category" at the 2020 National Hot Sake Contest.

Smooth texture, rich flavor that spreads in your mouth, and a clean finish.

A harmonious blend of flavors. A crisp, dry, and refreshing masterpiece that you won't tire of drinking.

This alcoholic beverage remains popular even 30 years after its release.

When warmed, the aroma becomes crisp and the taste becomes a clean, dry sake.

This time, we asked them to introduce dishes that pair well with carefully selected dry, warmed sake.

Here's the first item!

Steamed chicken neck in sake

===============================

★Material★

Chicken neck meat: 3 pieces

・Perilla leaves: 6 pieces

・Pickled plum: 1

• Shredded green onions: appropriate amount

• Japanese sake: a small amount

・Plastic wrap: appropriate amount

★Recipe★

1. Lightly grill the chicken neck meat over charcoal.。

Point: At home, lightly grill it in a frying pan. It's fine to just brown it a little. It will become fragrant. We'll cook it through when we steam it with sake later.

2.Wrap the chicken neck meat in shiso leaves.。

3. Pour sake evenly over the food, cover with plastic wrap, and microwave.

Microwave at 500W for 1 minute.

4. Mash the pickled plums, top with shredded green onions, and serve.

Point: Do not discard the sake used for steaming; pour it over the food.

The chicken neck meat is so flavorful, it's absolutely delicious!!

Seseri is the meat around the neck of a chicken, and only a small amount can be obtained from a single bird.

Chicken neck meat can be purchased at a butcher shop, but you can also use chicken thigh or breast meat, which are more convenient.

It can be substituted.

The savory flavor of the chicken and the sourness of the pickled plums are a perfect match!

The crunchy texture of the chicken neck meat makes it a perfect match for the carefully selected spicy sake!

And the other dish is

"Marinated liver"

A dish of boiled chicken liver marinated in tamari soy sauce!

The chicken liver has a rich flavor and is moist and tender.

This is a perfect match for carefully selected, crisp, dry wines!

Torikou-san has taken all the necessary precautions against infection!!

Even during these times, whether it's a New Year's party with a few friends or a family meal,

Please come and enjoy our dishes featuring Saisai chicken and our Yoshinogawa sake served warm at our restaurant.

We hope you'll continue to support Horoyoi OneDish this year as well!
