30th Edition [Nagaoka Fishing Port Kenjiro, Castle Second Wharf] × Junmai Ginjo Unfiltered Sake & Roasted Sake
With March here, I sympathize with those suffering from hay fever, as these are likely difficult days for them.
As the snow melts further, butterbur sprouts begin to appear, bringing a taste of spring to our dinner tables.
The Niigata Sake Festival, a major spring event in Niigata, is also a springtime tradition.
Unfortunately, this spring's event was also canceled, just like last year's.
So this spring, I'll share some easy recipes you can make at home.
Let's elevate your cooking with a dish recommended by a professional chef!
The restaurant that will be introducing the dishes to us this time is:

Now, let me introduce today's featured shop.
Kenjiro Nagaoka Fishing Port, Jōnai Second Wharf,
December 2020, Dia Plaza Nagaoka, 1st floor, in front of Nagaoka Station
(Former Ito-Yokado Marudai Nagaoka Store) has opened.
In 2016, they opened two stores in Kashiwazaki, and finally, their third store in the prefecture opened in Nagaoka.
Mr. Munehiro Mitani, the manager who also prepared today's meal, was seen filleting the fish.
The store manager is so handsome, you can't help but stare.
That's no surprise, as his grandfather was a fisherman and his father ran a sushi restaurant, so he had a lot to do with fish.
A palate, discerning eye, and craftsmanship that were naturally acquired from a young age without being taught.
Incidentally, the name "Kenjiro" apparently comes from the store manager's grandfather.
The restaurant consists entirely of private rooms, except for the counter seating.
The restaurant has an impressive display of large fishing flags, and there are several types of private rooms where you can enjoy delicious food and drinks.
The private, secluded rooms are a great way to instantly relieve the stresses of everyday life.
Currently, lunch is take-out only (11:30 AM - 2:00 PM),
The most popular item, the "Karatama Bento," also offers a meaty option.

◆◆ What is Irizake? ◆◆
Before soy sauce became widespread, sake was simmered with pickled plums and bonito flakes to make a thicker sauce.
All-purpose seasoningThat's it.
The perfect balance of umami from the broth enhances the flavor of the ingredients, elevating the dish to the next level.
Also great for reducing salt intake.
