This recipe is incredibly easy, from the ingredients you need to gather to every single step.
Even if you're not good at cooking or are busy, this is perfect for when you want to add an extra dish to your meal.
This is a light and refreshing snack that doesn't use any oil.
this time"Yoshinogawa Roasted SakeThis is used to season the chicken breast.
We'll also be keeping an eye on the new ways it can be used.
Okay, let's start by preparing the ingredients!
★Ingredients★ (1 serving)
・Chicken breast: 3 pieces
• Cucumber: 1/2 (We have prepared one whole cucumber for clarity during the photo shoot.)
・Japanese ginger: 1
・Perilla leaves: 2 pieces
- Original plum paste: Mix 2 plums with a little Yoshinogawa roasted sake.
Yoshinogawa roasted sake: 3 tablespoons
★Recipe★
1. Using the back of a knife, remove the tendons from the chicken breast by pulling them out.
2. Place the chicken tenderloins (with the sinews removed) in a frying pan.
Point: Do not turn on the heat to the frying pan yet!!
3. Pour about 3 tablespoons of Yoshinogawa Irizake over the chicken breast.
Light the fire and steam-cook it.
Place one side over medium heat, and once it comes to a boil, add the chicken breast.
Flip it over, cover with a lid, and wait 3-4 minutes over low heat.
4. In the meantime, cut the cucumber, Japanese ginger, and perilla leaves.
Tip: It's easier to cut shiso leaves if you roll them up before cutting!
5. Turn off the heat and let the chicken breast cool down.
6. You can make your own original pickled plum paste using the sliced cucumber, Japanese ginger, and perilla leaves.
Point: The original plum paste is made by removing the pits from two plums, mashing them, and adding roasted sake.
7. Once the chicken breast has cooled slightly, cut it into bite-sized pieces.
8. Plating complete!!
Point: Sandwich the cucumber, myoga ginger, and shiso leaves mixed with pickled plum paste between slices of chicken breast.
Serving it high makes it look even more photogenic.
<Arrangement advice from the shop owner, Mr. Obuchi>
Instead of pickled plum paste, try cheese, grated radish (momiji, ponzu sauce), and wasabi.
I also recommend trying different toppings.
Now, let's review today's key points.

And finally, the restaurant's most popular menu item
"Charcoal-grilled yakitori skewers (liver, chicken neck, homemade chicken meatballs)"を
They made it for me!
Our homemade chicken meatballs are made with ingredients such as onions, leeks, ginger, garlic, and eggs.
It produces a rich aroma and complex umami flavor.
Please enjoy this with our homemade sauce.
I put grated garlic on the liver and put it in my mouth.
The chilled sake is added to the creamy texture.
A sniff? (Intoxicated) My hand reaches out unconsciously, as if drawn to it.
The chicken neck meat is seasoned with salt and pepper, and it goes perfectly with the chilled sake.
「Charcoal-grilled Buchi」The shop is still new,
The shop owner, Mr. Obuchi, has been working under his master since he was around 20 years old.
After about 10 years of training, he opened a restaurant where you can enjoy yakitori grilled over charcoal.
It opened on April 22, 2021.
When it comes to yakitori, "skewering is crucial!"
Even in difficult circumstances, store manager Obuchi-san's smile was very impressive.
Not only is the food delicious, but Manager Obuchi's charming looks and engaging conversation are also delightful.
I think that's another appealing aspect of the shop.
It's enjoyable for individuals as well as families!
Of course, this restaurant also serves local sake from Niigata.
