The 37th edition of [Kameda no Torikin] x Carefully Selected Dry New Sake & Roasted Sake

[October 1st is Sake Day]

Did you know that October 1st is "Sake Day"?

There are two possible origins.

1. The time when sake brewing begins at many breweries.

2. The twelve signs of the Chinese zodiac are involved, and October is the "Rooster" month.

The kanji character "酉" originally meant a sake jar or sake itself.

In recent years, it has become customary, mainly by the Japan Sake Brewers Association, to toast with sake at 7:00 PM on October 1st.

Please don't limit yourself to Sake Day this month, but enjoy toasting with sake and pairing it with autumn delicacies throughout October.

This time, Yoshinogawa will be releasing a special edition to coincide with Sake Day on October 1st, 2021.Yoshinogawa Official YouTube ChannelWe held a live streaming event at [location/location].

We've also uploaded a video of that event. Please check it out!

Now, the October edition of Tipsy Onedish is located in Konan Ward, Niigata City, Niigata Prefecture."Kameda no Torikin"I visited Mr./Ms. [Name] and they introduced me to dishes that pair well with Yoshinogawa sake.

The sake to accompany the meal is a bottle that was just released from the brewery on September 27, 2021.Yoshinogawa Selected Dry New Sake」。

This is a freshly pressed new sake from Yoshinogawa's popular "Selected Dry" brand, and it's the first batch of sake brewed this season, bottled while still fresh.

This sake truly reflects the enthusiasm of the brewers for this season's production.

And this time, that isYoshinogawa Selected Dry New SakeIn accordance with '',"Tender Steamed Chicken with Sake and Mushroom Sauce"をThey made it for me!

Steamed chicken becomes moist and tender simply by placing it in hot water and waiting for an hour.

And four kinds of mushrooms, a taste of autumn.Yoshinogawa's roasted sakeThe delicious broth it produces transforms into a sauce that pairs perfectly with steamed chicken!!

Okay, let's start by preparing the ingredients!

★Ingredients★ (2 servings)

Chicken breast: 250g

<Seasoning>

Light soy sauce: 15 cc

・Taste: 15 cc

・Alcohol: 15 cc

Salt: a pinch

- Grated garlic: a small amount

Grated ginger: a small amount

<Mushroom Sauce>

Yoshinogawa Roasted Sake: 60 cc

・Water: 150 cc

Grated ginger: a small amount

- Enoki mushrooms, shimeji mushrooms, maitake mushrooms, shiitake mushrooms (use your preferred amount; any type of mushroom is fine)

<Finishing>

White sesame seeds: a small amount

Green onions: appropriate amount

★Recipe★

1. Remove the skin from the chicken. Make incisions in the meat to allow it to cook more easily, then open it up.

Pat dry with a paper towel, add seasoning, and rub well.

2. Drain the marinade from the meat and place it in a resealable plastic bag. Remove the air from the bag and close the zipper.

3. Place in water at approximately 60 degrees Celsius for about an hour.

*For the photo shoot, we used a vacuum-sealed product. At home, you can substitute it with a resealable plastic bag.

Point: If you don't have a thermometer, use the same amount of water as boiling water.Adding that up brings the temperature to approximately 60 degrees Celsius.

4. Make the mushroom sauce. Add sesame oil to a lightly heated frying pan and sauté your favorite mushrooms.

5. Once the mushrooms are cooked through, add water and roasted sake, and simmer briefly until reduced.

6. Pat the sous vide chicken dry with a paper towel and slice it to your desired size.

7. Plate the dish and it's ready to serve.

The chicken is cooked at a low temperature, resulting in a moist and tender texture.

The rich umami of the mushrooms matches perfectly with the roasted sake, resulting in an exquisitely flavored sauce.

The aroma of koji pairs perfectly with the fresh taste of carefully selected dry new sake!

It's not just great as a snack with drinks, but it's also recommended with freshly harvested rice!

Now, let's review today's key points.

★★Today's Key Points!★★

Part 1: Make sure to properly prepare the chicken.

Part 2: Cook at a low temperature to achieve a moist finish.
