38th Edition: [Kitano Suisan Seafood Wholesaler, Tsubame-Sanjo Store] × New Rice Brewed Junmai Sake & Roasted Sake
Autumn is well underway. Are you all enjoying some delicious drinks?
The autumn leaves on the trees on the brewery grounds are now at their peak, and a new "sugidama" (cedar ball) has appeared at Yoshinogawa. This is a common sight at many sake breweries around this time of year, but a sugidama with green leaves serves as a sign that "new sake has been made this year!!"
We've also uploaded the process of making a cedar ball (sugidama) below, so please check it out!
Now, the November edition of Tipsy Onedish is located in Sanjo City, Niigata Prefecture."Kitano Suisan Tsubame-Sanjo Store, Seafood Wholesaler"I visited Mr./Ms. [Name] and they introduced me to dishes that pair well with Yoshinogawa sake.

And the sake to accompany the meal is a bottle that was just released from the brewery on November 1, 2021.Yoshinogawa New Rice Brewed Junmai SakeThis is a new sake made with freshly harvested rice from Niigata Prefecture this autumn. It is a pure rice sake that allows you to enjoy the fresh taste of a newly brewed sake, with the fresh aroma of koji wafting from it. The label has also been redesigned with a cedar ball at the center and scattered rice stalks.

Enjoy it lightly chilled, along with the seasonal flavors of autumn.
And this time, that isYoshinogawa New Rice Brewed Junmai SakeIn accordance with '',"White fish carpaccio with Yoshinogawa roasted sake dressing"をThey made it for me!
Okay, let's start by preparing the ingredients!
★Ingredients★ (2 servings)
・Sea bream sashimi: 1 block
• Onion: 1
• Paprika (red and yellow): 1/2 of each
3 cherry tomatoes
Radish sprouts: 1/5 pack
• Lemon: 1/8 cut
<Dressing>
Yoshinogawa Roasted Sake: 2 tablespoons
Olive oil: 2 tablespoons
• Salt: 2 pinches (rock salt is recommended)
Black pepper: 2 pinches

★Recipe★
1. Slice the onion horizontally.
Tip: Hollow out the stem and cut at a slight angle to get nice slices.

2. Cut the bell pepper lengthwise.

3. Briefly soak the onion and bell pepper in water.
Point: Soaking bell peppers in water will remove their bitterness. However, since nutrients will be lost, only soak them briefly.

4. Make the dressing.
Add 2 tablespoons of Yoshinogawa roasted sake, salt (rock salt), and 2 pinches of black pepper, and mix once. Finally, add 2 tablespoons of olive oil and mix well.
Point: Once the salt (rock salt) has dissolved, add the olive oil.

5. Mix the dressing with the chopped onions and bell peppers.
Point: Mix the ingredients first to allow the flavors to meld with the onions, like a marinade.

6. Cut the sea bream into pieces and top with a dressing of salt, black pepper, lemon juice, and roasted sake.

7. Plate the dish and it's ready to serve.

This time we used a block of sea bream, but please try it with your favorite commercially available pre-cut sashimi such as bonito or salmon. The roasted sake dressing can also be used as a marinade if you don't like the strong acidity.
Now, let's review today's key points.
★★Today's Key Points!★★
Tip 1: Add the olive oil last.
Tip 2: Mix the vegetables and dressing together beforehand.
Step 3: Season the fish beforehand.beshi

And finally, the restaurant's recommended menu"Special Selection Assortment"They made it for me!
While the contents may vary depending on the day's catch, this platter is based on bluefin tuna, whelk, and local white fish, with two of the day's recommended items added on top. The sashimi slices are exceptionally thick, and the tuna is sourced from a specialized wholesaler to ensure the best quality available at the moment. The lean tuna offers a rich umami flavor and a smooth texture that melts in your mouth. (Serves 3-4 people)

"Kitano Suisan Tsubame-Sanjo Store, Seafood Wholesaler"The shop has been open for 19 years.
The interior is designed to resemble a sake brewery, and the open ceiling uses repurposed beams from an old house, creating a very comfortable atmosphere.
“"We want people from both within and outside the prefecture to enjoy local sake and seasonal fish," says store manager Akihito Sato.
The chef in charge of the dishes this time is Yuki Kodama, the head chef, who says his favorite fish is "salmon."

The menu includes the date, and you can enjoy a variety of recommended dishes depending on what's available each day. Furthermore, each table has a flower arrangement, and the chopstick rests are made from dried sardines—it's a wonderful restaurant overflowing with thoughtful touches everywhere you look.
