39th Edition: [Kusou Shunsai Raijin Ken'o Store] × Junmai Ginjo made with our own cultivated rice "Gohyakumangoku" <Freshly pressed undiluted sake> & Roasted sake

December has arrived, and there's only one month left in the year. Lately, I've been feeling like the years are passing by faster and faster as I get older.

At the Yoshinogawa brewery, as the year draws to a close, sake brewing is in full swing. Rice is steamed every day, filling the brewery with delicious steam. The cold, snowy season will soon arrive in the plains of Nagaoka where the brewery is located. However, this harsh climate is one of the essential elements for sake brewing. Sake brewing is said to depend on "1. Rice, 2. Water, 3. Climate, and 4. People," and Nagaoka has all four of these elements, which is why we can produce such delicious sake! This time, we will introduce dishes that pair well with such delicious sake!

The final "Tipsy Onedish" of the year will be held in Tsubame City, Niigata Prefecture."Kusou Shunsai Raijin Ken'o Store"I visited Mr./Ms. [Name] and they introduced me to a kamameshi-style mixed rice dish that pairs well with Yoshinogawa sake!

As many of you may know, Tsubame City in Niigata Prefecture is a town where the production of Western-style tableware is thriving. During its heyday in the Showa era, kamameshi (rice cooked in a pot) was expensive and not something ordinary people could afford. However, restaurant owners in the city worked to popularize kamameshi so that it could be enjoyed by many, and as a result, the number of restaurants serving it expanded.

Because of this connection, Raijin opened a home delivery kamameshi specialty shop in August of this year.Yukariya Ken-o Store」They have opened a new shop. They use seasonal ingredients and Koshihikari rice from Niigata Prefecture, add dashi stock from "Yasumaru Dashi," cook it in an authentic iron pot, and deliver it to you as is!

This time, we'll be using that recipe to show you how to make seasoned rice using roasted sake!

And the sake to accompany the meal is the one that was just released from the brewery at the end of last month.Yoshinogawa's own cultivated rice "Gohyakumangoku" Junmai Ginjo <Freshly pressed undiluted sake>This product is a Junmai Ginjo sake that Yoshinogawa has handled from rice cultivation to sake brewing. It uses 100% "Gohyakumangoku" rice carefully cultivated in the rice paddies of the Nagaoka area, and is pasteurized only once during bottling.

This is an undiluted sake that offers a fresh, fruity aroma and a rich, savory flavor derived from rice. It is best enjoyed chilled or at room temperature!

And this time, that isYoshinogawa's own cultivated rice "Gohyakumangoku" Junmai Ginjo <Freshly pressed undiluted sake>In accordance with '',"Gomoku Kamameshi-style mixed rice dish using Yoshinogawa's roasted sake"をThey made it for me!

Okay, let's get started with this easy recipe: just mix, add, and cook!

★Ingredients★ (3 cups)

Rice: 3 cups

Water: 430cc

Roasted sake: 50cc

Please add your favorite ingredients in your preferred quantities.

Shredded burdock root

Carrots

Boiled bamboo shoots

Boiled wild vegetables

·chicken meat

・ Shiitake mushrooms

★Recipe★

1. Place the rinsed rice (3 cups) into the rice cooker.

2. Add 8 parts water to 1 part Yoshinogawa roasted sake to make the broth. *If using new rice, reduce the amount.

Point 1: The ratio is 1 part roasted sake to 8 parts water.

Point 2: Mix the roasted sake and water well.

3. Put the broth into the rice cooker, then add the ingredients.

Point 3: Add chicken to bring out the flavor.

4. Cook it as you normally would rice, and stir it once it's done.

5. Plate the dish and it's ready to serve.

The broth from the roasted sake perfectly balances the flavors of the ingredients, and that deliciousness is concentrated in the rice, making it a perfect match for the fresh and rich taste of freshly pressed sake!

As demonstrated in this recipe, you can enjoy the flavorful broth of kamameshi (rice cooked in a pot) just like in a restaurant, using only one bottle of roasted sake! What's more, all you have to do is mix the roasted sake with water and cook it in a rice cooker! Why not try making it with your children during the New Year's holidays? The ingredients are the same as those used in the Gomoku Kamameshi served at our restaurant, but you can also use your favorite ingredients such as maitake mushrooms or oysters! Once you've made your proud kamameshi, please upload it to Yoshinogawa's Instagram or Twitter!

Now, let's review today's key points.

★★Today's Key Points!★★

First, the ratio of roasted sake to water should be 1:8.

Step 2: Mix the roasted sake and water beforehand.

Step 3: Add chicken to bring out the flavor.beshi

And one more item, the restaurant's recommended menu item."Seafood rice bowl lunch with butter-grilled abalone"They made it for me!

The restaurant's popular seafood rice bowl is overflowing with fresh sashimi! This time, it features a luxurious lineup of tuna, yellowtail, squid, salmon, horse mackerel, sea bream, gizzard shad, steamed shrimp, sweet shrimp, crab, negitoro (minced tuna with green onions), inari (fried tofu pouches), and egg! The types of fish may change depending on the day's catch, but the number and volume of toppings are standard and not just for the photo! Which one should I eat first? Where's the rice? It's a seafood rice bowl that's simply packed with volume. And for a limited time, it also comes with butter-grilled abalone, making it an even more luxurious version. Please enjoy this delicious lunch.

「Kuso Shunsai Raijin Ken-o Store」This restaurant, which opened in November 2007, offers a sophisticated adult atmosphere with its spacious interior and counter seating overlooking the garden. It also has private rooms and sunken seating areas, creating a relaxed and comfortable ambiance.

The beautiful, substantial Shigaraki ware dishes, made by a ceramic artist who is an acquaintance of President Kuroi, further enhance the presentation of the sashimi platter.
