Happy New Year 2022! This year, too, we at Horoyoi OneDish will continue to introduce you to delicious sake, recommended recipes, and wonderful restaurants. Thank you for your continued support.
The first stop on this year's Tipsy Onedish is Miyauchi, Nagaoka City, Niigata Prefecture."Izakaya Maruhide"It's [Name]! Since it's the New Year, she's shared two recipes that pair well with Yoshinogawa sake!
Maruhide is located a 3-minute walk from Miyauchi Station on the JR Shin'etsu Main Line (Naoetsu to Niigata). It is very close to the Yoshinogawa storehouse, and is also a popular evening spot for Yoshinogawa employees.

And the drink to pair with this dish is,Ginjo Gokujo YoshinogawaThe Gokujo Yoshinogawa series is a sake created with the aim of making sake more accessible and allowing drinkers to experience the wonderful qualities of Japanese sake in their daily lives. Made entirely with carefully selected Gohyakumangoku rice from Niigata Prefecture, it boasts a subtly sweet, gentle ginjo aroma and a clear, refreshing taste that will impress even the most discerning sake connoisseurs.

A refreshing aroma and a smooth, transparent mouthfeel. This sake is a masterpiece of uncompromising craftsmanship, made with carefully selected rice and water!

・Okra: 2 pieces

★Recipe★

2. Place the chopped ingredients on a plate, then top with the minced tuna and the egg yolk.

3. Cut the nori into quarters, and the first dish is complete! Let's eat it with soy sauce!

"Sticky Hand Rolls"This dish features pickled daikon radish as the key to its flavor, and the crisp texture of the yam and the green of the okra add a beautiful splash of color. The various textures, along with the rich flavors of the egg yolk and minced tuna, perfectly complement the gentle umami of the premium Yoshinogawa sake! You can enjoy it as hand-rolled sushi or as a sticky rice bowl on top of hot, freshly harvested rice. Have fun mixing and rolling it up at home with your kids!
Next up, the second item is"Deep-fried tofu with original cream cheese."をThey made it for me!
Sake and cheese are a perfect match! This recipe is a must-try for cheese lovers as well.
★Ingredients★ (1 serving)
• Deep-fried tofu: 1 sheet (use a thin one)
• Cream cheese: 50g
・Miso: 20g
Olive oil: appropriate amount
Yoshinogawa roasted sake: 1 tablespoon

★Recipe★ (1 serving)
1. Mix the cream cheese with olive oil, miso, and Yoshinogawa roasted sake in that order.

2. Lightly toast the thin fried tofu until it's crispy. (For about 1-2 minutes in a toaster oven.)
Cut into 5 equal parts.
Point: Baking slowly at a low temperature will result in a crispy texture.

3. Plate the dish and the second dish is complete!

"Deep-fried tofu with original cream cheese."はThis dish features thinly fried tofu that has been pan-fried until crispy, then dipped in cream cheese for an easy and delicious treat. The cream cheese becomes softer when thinned with olive oil, and the addition of miso and roasted sake adds richness and depth to the flavor. The olive oil's aroma brings the cream cheese and miso together, and the acidity of the roasted sake is a key element, making it a perfect match for the crispness of premium Yoshinogawa sake. It's a dish that will have you reaching for another glass of sake.
Now, let's review today's key points.
★★Today's Key Points!★★
Step 1: Crisply fry thin pieces of fried tofu. *Use low heat!
Step 2: Thin the cream cheese with olive oil.
Tip #3: Add miso as a secret ingredient.
