41st Edition: Echigo Chaya Matsuzaki Store x Haru Fuwari & Irizake
Although spring has officially arrived according to the calendar, Niigata is still covered in a pristine white winter landscape.
This time, we'll be introducing a popular alcoholic beverage that will give you a head start on announcing the arrival of spring, along with a wonderful shop!

The alcohol this time isYoshinogawa Haru Fuwari JunmaiThis sake has been redesigned this year to be a junmai sake, and has been reborn as a sake that evokes the rich flavor and breath of spring! It is a sake that we hope you will enjoy while waiting for the arrival of spring.

This is a junmai sake brewed with new sake from Niigata Prefecture harvested in 2021. Please enjoy the balance of subtle sweetness and acidity.
The restaurant where you can have your meal prepared is located in Matsuzaki, Higashi Ward, Niigata City.Echigo ChayaIt's Mr./Ms.

Echigo Chaya Matsuzaki branch is an izakaya (Japanese pub) where you can fully enjoy Niigata's seafood and mountain delicacies, centered around their famous wappa-meshi (steamed rice in a wooden box). In a purely Japanese-style setting, you can relax and enjoy a delicious meal in a comfortable atmosphere. The kitchen is run by a team of chefs who have dedicated themselves to Japanese cuisine since the age of 18, including head chef Watanabe, and other staff members who are dedicated to perfecting the flavors of the food.
The first thing we asked Echigo Chaya to make for us was...Grilled duck breast and yellowtail with sake"is!
★Ingredients★ (1 serving)
- Duck breast (chicken thigh can be substituted): 40g
・Yellowtail (salmon or Spanish mackerel can be substituted): 50g
Yoshinogawa roasted sake: 10cc
・Oil: Appropriate amount
<Side vegetables>
Bamboo shoots: 20g
・Rapeseed blossoms: 1 bunch
・Leek: 20 cm
<Roasted sake miso>
Red miso: 10g
Sugar: 5g
Yoshinogawa roasted sake: 3cc
<Lightly pickled colorful vegetables>
Cucumber: 10g
・Carrot: 10g
Turnip: 10g
Red radish: 10g
Salt: 5g
Yoshinogawa roasted sake: 5cc
★Recipe★
1. Marinate the duck breast and yellowtail fillets in roasted sake for 20 minutes.

2. Add a little oil to a frying pan and cook the chicken from step 1 skin-side down over low heat, cooking it slowly until done. Soak the green onions in the roasted sake and brown them.

3. Mix together the red miso, sugar, and Yoshinogawa roasted sake.

4. Boil the bamboo shoots and rapeseed blossoms separately as side vegetables.
5. For the colorful pickled vegetables, cut them into bite-sized pieces, rub them well with salt, rinse with water, squeeze out the excess water, and mix with the roasted sake.

6. Cut the duck breast and serve with grilled leeks. Arrange the yellowtail, boiled vegetables with roasted sake miso, and pickled vegetables on top to complete the dish.

The savory flavor of the duck's fat and the unique seafood taste of the yellowtail are a perfect match for the tangy, spring-like sip! The lightly pickled vegetables seasoned with roasted sake add a nice accent, making you want to keep drinking!
And one more item, Echigo Chaya's recommended spring menu item"Steamed sea bream and spring vegetables in sake"They made it for me.!

The lightly steamed sea bream has a delicate flavor, and the tangy taste of the roasted sake is a delightful combination.
