The 49th edition of [Sushi Kazu] x Yoshinogawa Selected Dry New Sake

The temperature has dropped sharply, the mountains are beginning to change from green to red and yellow, and the scent of osmanthus flowers fills the air. The brewing season has officially begun at the brewery, steam is rising from the second-floor windows, and the pleasant aroma of steaming rice can now be heard throughout the premises.

The serious gazes of the master brewer and brewery workers, so different from how they usually talk, are enough to make your heart flutter.

Now, in this segment, we visit restaurants and bars in Niigata Prefecture and ask them to come up with snacks that pair well with Yoshinogawa sake.Tipsy OneDish」。This month in Doai, Nagaoka CityIt is located"Sushi Restaurant Sushi Kazu"To Mr.「Yoshinogawa Selected Dry New Sake」They prepared a dish that was perfect for it!

This time's alcohol「Yoshinogawa Selected Dry New Sake」This is the first batch of sake brewed this year! This batch will serve as a benchmark for all sake brewing this season, so we believe you will be able to feel the enthusiasm of the master brewer and brewery workers even more strongly in this sake. Please enjoy a glass that allows you to feel the deliciousness of the rice and a refreshing taste.

The sushi restaurant that will be introducing the dishes is Sushi Wa, a sushi restaurant that has been in business for 45 years, run by the husband and wife team. The owner, Kazuo Suzuki, became an apprentice at a sushi restaurant in Nagaoka City when he was 18 years old and trained under his master for about 10 years. He also went to Tokyo to study, and apparently trained from morning till night every day, sacrificing sleep. During the day, he would watch and learn his master's techniques, and at night he would secretly practice making sushi using okara (soy pulp) and towels.

The reason he started his own business was a single comment from his wife, who had been supporting him while he was training: "Why don't you start your own business?"

Of course, this restaurant serves sushi made with fresh ingredients, but it's also a wonderful place where you can enjoy the perfect chemistry and banter between the husband and wife who run it.

Now, let's get straight to the easy recipe! This time, we'll be making "Japanese Yam and Squid Salad"!

★Ingredients★ (1 serving)

Japanese yam: approximately 100-150g

- Squid: 1/4 of a squid

Wasabi: as needed

- Gly-cut nori seaweed: as needed

・Perilla: 1 piece

Soy sauce: as needed

★Recipe★

1. Cut the yam in half and peel it thickly.

2. Slice thinly and then cut into julienne strips.

3. Cut the squid into thin strips.

4. Mix the squid and grated yam well.

5. Top with shiso leaves, shredded nori seaweed, and wasabi, and it's done!

Yamatoimo has less moisture than nagaimo, and when sliced thinly and finely, its crisp texture and the sweetness of the squid blend well together. When eaten with a little soy sauce, you can appreciate the crisp taste of the carefully selected dry new sake even more.

This time we used wasabi, but you can also enjoy a refreshing taste with pickled plum paste. Please try both flavors at home.

The slightly sweet miso and the lingering spiciness of the Kagura Nanban peppers further enhance the crisp taste of the new sake. It's a flavor that will naturally make you reach for another glass of this carefully selected dry new sake. This Kagura Nanban miso is homemade by the owner's wife, who sources Kagura Nanban peppers from Yamakoshi from a specific farmer every year and finishes it with a slightly sweet flavor. It has a following of fans, and customers inquire about it every year. Since quantities are limited, please be sure to order if you find it in the store.
