The first snow of the season fell in Nagaoka the other day. The snow season is finally here!! While snow can make daily life difficult in many ways, it is an essential element in sake brewing. Snow, a gift from nature, keeps temperatures low and purifies the air. We are incredibly excited to see what kind of wonderful sake our master brewer and other brewery workers will create this year in that clear air!! We will all work together as a team to ensure that everyone can enjoy "delicious sake, Yoshinogawa"!

Now, let's get started with today's dish."Tempura Egg Drop Rice Bowl <Seishin Sumasuta Don>"Here's a recipe!

The recipe is here ↓

★Ingredients★ (1 serving)

Tempura: Two items of your choice (Shrimp and goby at the time of filming)

• Onion: 1/8 (blanched for 2-3 minutes)

Maitake mushrooms: 30g

・Eggs: 2

・Noodle soup base: 120cc (amount after adding water)

• Sugar: 1 teaspoon

• Rice: 1 bowl

Shredded nori seaweed: appropriate amount

・Mitsuba (Japanese parsley): appropriate amount

★Recipe★

1. Put the noodle soup base, sugar, pre-boiled onions, and raw maitake mushrooms into a pot and turn on the heat.

Point: Blanch the onions beforehand and cook them at the same time as the maitake mushrooms, which will be used raw!

2. Bring to a boil over medium heat, then flip the maitake mushrooms over to allow the flavors to meld.

3. Place rice, shredded nori seaweed, and tempura in a bowl.

4. Once the edges of the pot start to simmer, pour in the beaten egg in a circular motion.

5. Once the eggs around the edges of the pan have started to set, push them towards the center. When the entire egg is semi-cooked, use a spatula to press the edges and place it into a bowl.

6.Complete~

The flavorful broth-based egg drop soup and tempura, accented by the maitake mushrooms, pairs perfectly with the fresh, savory taste of this junmai ginjo sake.
