The 58th edition of [Seasonal Vegetables & Fish Kaoruya] x Nomigoro Junmai Sake (Sake that can be enjoyed by all)
Summer is finally here, and we're experiencing hot days every day. The quintessential summer event in Nagaoka is undoubtedly the grand fireworks display at the Nagaoka Festival on August 2nd and 3rd. Yoshinogawa will be offering a three-foot diameter firework on the first day, August 2nd, so please come and enjoy it.

Now, in this corner, "Tipsy OneDish," we visit restaurants and bars in Niigata Prefecture and ask them to come up with snacks that pair well with Yoshinogawa sake. This month's Tipsy OneDish is in Asahioka, Nagaoka City.It is located「Seasonal Vegetables & Fish Kaoru-ya」Mr.Nomigoro Junmai (pure rice sake)We had them prepare a dish that goes well with ''! This time it's the restaurant's staff meal ''Vegetables baked in foil"is!

The alcohol pairing for this occasion「Nomigoro Junmai (pure rice sake)」This is a junmai sake that received the highest rating at the "Hatsunomi-kiri," an important event for sake breweries. "Hatsunomi-kiri" involves tasting all the sake stored in tanks at the brewery, checking the maturation and aroma of each. The brewers, including the toji (master brewer), are filled with tension as they face the evaluation of the "quality of the sake" by stakeholders both inside and outside the company. In the midst of all this, the sake that is judged to be perfectly ready to drink is...「Nomigoro Junmai (pure rice sake)」This is it. To deliver the exact same taste as it is stored in the tank, it is bottled unpasteurized. The master brewer commented, "It has a gentle acidity and a refreshing taste that you can enjoy." You can enjoy the changes in taste depending on the temperature, so please savor it.

And then they will introduce the dishes."Seasonal Vegetables and Fish Kaoruya"」This year marks the 20th anniversary of this "adult izakaya" (Japanese pub). The owner, Hisataka Kurita, hails from Asakusa in Tokyo and began cooking for his family. He found joy in seeing others happy, which naturally led him into this industry. He was taken to Niigata by a senior apprentice who asked him to help open a restaurant, and that's how he got to where he is today. The restaurant's basic principle is to offer customers high-quality dishes at izakaya prices. They try to make sauces and pickles from scratch as much as possible, and use local, seasonal ingredients whenever possible. The owner is a craftsman with a strong work ethic, "strict with himself, kind to others," but he also has a lovely smile that he shows from time to time. The menu is extensive, and the restaurant is bustling with customers even at lunchtime.

The dish introduced to us this time by Kaoruya, a restaurant specializing in seasonal vegetables and fish, is「Vegetables baked in foil"is.This time, we're sharing a quick and easy recipe that's served as a staff meal at the restaurant. While it's not available for the restaurant's regular menu, it's a very simple recipe, so please try making it with your children!

Topping it with cheese is also recommended.
