The 64th installment: [Masuya Shokudo] x Ginjo Gokujo Yoshinogawa

Happy New Year 2024! We look forward to your continued support of "Tipsy OneDish" this year as well.

This year, in addition to introducing delicious restaurants in Niigata Prefecture, we'll also be sharing easy, high-quality snack recipes using professional techniques! We hope this will be helpful when you're wondering what to make for dinner. We hope you'll enjoy it along with "Yoshinogawa, the best sake!"

Now, for our "Tipsy OneDish" segment, we visit restaurants and bars throughout Niigata Prefecture and ask them to come up with snacks that pair well with Yoshinogawa sake. This year's first Tipsy OneDish takes us to Agano City, a place the segment is visiting for the first time.「Masuya Restaurant」This is [Name]. This time, they prepared dishes that pair well with "Ginjo Gokujo Yoshinogawa"!

This time, we're featuring Yoshinogawa's flagship product, "Ginjo Gokujo Yoshinogawa." Based on the "ginjo brewing" method, they continued this technique even during the post-war rice shortage, passing down their skills to future generations. This Gokujo Yoshinogawa is the culmination of that expertise. They are committed to using locally sourced "Niigata Prefecture rice" as their raw material, and the brewing water is "Tenka Kanro-sen," soft groundwater drawn from their premises that contains a balanced blend of minerals. Made entirely with Niigata Prefecture-grown Gohyakumangoku rice, it offers a refreshing aroma and a clear, smooth taste. Its subtle sweetness, which doesn't overpower food, is the secret to its popularity. Please enjoy it chilled or on the rocks.

Appearing on Tipsy OneDish this time is a restaurant in Agano City, home to Hyoko Lake, which is famous as a wintering ground for swans.Masuya Restaurant」It's Mr./Ms.Toshihiro Watanabe, the owner who will be introducing the dishes, trained at a traditional Japanese restaurant after graduating from high school, gained various experiences, and then took over his family's diner. This restaurant used to be a retro diner serving set meals and rice bowls at lunchtime. Last May, it was renovated and reopened as a restaurant that can be used as a diner during the day and an izakaya (Japanese pub) at night, incorporating culinary techniques honed at a high-class Japanese restaurant. The owner is very particular about the seasoning of the dishes, even making the seasoning liquids from scratch. There is also a room on the second floor that can be used for entertaining clients or banquets, and the restaurant offers a variety of homemade dishes from appetizers to desserts.

Now, let's get straight to the recipe!

The recipe is here ↓

★Ingredients★ (1 serving)

・Chinese cabbage: 1 piece

・Leeks: 2-3 slices

Enoki mushrooms: 20g

・Tofu: as appropriate

Green leafy vegetables: as needed

• Pork belly slices: 50g

・Egg: 1 piece

Yuzu: a small amount

・Noodle soup base: 180cc (diluted to the specified ratio to make 180cc)

★Recipe★

1. Cut the meat and vegetables and put them in a pot. Add yuzu if desired.

Point: Place items that take longer to cook, such as meat, at the bottom of the pot.

2. Put the noodle soup base into a pot and heat it.

3. While the pan is on the heat, separate the egg yolks from the whites, and whip the egg whites to make meringue.

4. When the ingredients are cooked, mix in the egg yolk and meringue.

5. Gently pour the meringue into the pot over the heat so that the vegetables are covered, and when the meringue starts to bubble, turn off the heat and cover with a lid.

6. Let it sit for 1-2 minutes using residual heat, and it's done!

This hearty hot pot dish is perfect for this cold time of year. The delicious flavors of vegetables and pork belly melt into the piping hot broth, and when you eat it while soaking the fluffy egg in the broth, you can enjoy a light and juicy texture. Once your chilled body is warm and your mouth is filled with delicious flavor, take a sip of chilled Ginjo Gokujo Yoshinogawa sake. Its refreshing taste will bring out the sweetness of the pork belly fat. For the finale, we recommend adding rice to the flavorful soup. In this recipe, we have written "mentsuyu" (noodle soup base) for the soup for simplicity, but the restaurant uses its original "awase dashi" (combined broth). You can enjoy this dish at the restaurant until the end of January, so please enjoy it with Ginjo Gokujo Yoshinogawa sake. *Served in 300ml portions at the restaurant.

Very popular menu

Fried Chicken: 750 yen (tax included)

A hugely popular menu item that regulars always order! This fried chicken is the "crispy on the outside, juicy on the inside" type. By slowly frying it in oil at 170-175°C for just under 6 minutes, the chicken, marinated in a secret sauce, bursts with flavorful juices from the crispy, spice-infused thin coating. There are six large pieces of fried chicken, and you'll be surprised at how much there is for one person, but it's so delicious that you'll find yourself reaching for one or two more. Fried chicken and sake also go surprisingly well together; the juicy flavor of the chicken and the crisp taste of the premium Yoshinogawa sake are a perfect match. We were secretly told that the crispy coating is made with "wheat flour," but the sauce is a secret recipe and cannot be revealed to the public. Be sure to try it at the restaurant!

「Masuya RestaurantAt "[Restaurant Name]", they also offer carefully selected dry and chilled draft sake! Please enjoy this Yoshinogawa as well.
