The latter half of this year's Golden Week brought warmer temperatures, making it comfortable enough to wear short sleeves. I'm sure some of you enjoyed a 10-day holiday! Many people visited the Yoshinogawa Sake Museum Brewery. Thank you very much. The weather will become even more ideal for strolling around the Yoshinogawa area from now on. Please do come and enjoy a tipsy walk.

Now, in this segment called "Tipsy OneDish," we visit restaurants and bars in Niigata Prefecture and ask them to come up with snacks that pair well with Yoshinogawa sake. The restaurant that will be preparing the dishes for us this time is located in Chuo Ward, Niigata City.Drinking spot JusanyaThis is [Name of person/organization]. This time, they prepared dishes that pair well with "Snow-Aged Junmai" sake!

"Snow-Aged Junmai" is a sake that is in season now, aged using a storage method unique to snowy regions. For over 30 years, Yoshinogawa has been setting up snow cellars on its brewery grounds during the winter months to store sake. This year, too, freshly pressed junmai sake will be stored in tanks covered with snow, allowed to mature slowly, and bottled as the snow melts. Enjoy this junmai sake, which retains its fresh aroma while fully bringing out the deliciousness of the rice and boasting a smooth mouthfeel. It is a delicious gift from winter, perfect for this time of year when the warmth of early summer can be felt.

And the person who will cook the meal isDrinking spot Jusanya" is a hidden gem of a restaurant with a calm atmosphere that opened in February 2020. The owner, Takehiko Hori, worked as a Japanese cuisine chef for about 27 years at a hotel in front of Niigata Station, and now he has expanded his menu to include Western and Chinese dishes in addition to Japanese cuisine, offering 120 different dishes all by himself. He makes an effort to use as many Niigata-produced ingredients as possible and is particular about making his own seasonings.

And this time, they made "Avocado with Kelp and Sesame Flavor."
Now, let's get straight to the recipe!
The recipe is here ↓
★Material★

• Avocado: 1 (110g)
• Tororo kombu (shredded kelp): appropriate amount
≪Choregi Salad Dressing≫
・Sesame oil: 100g
Vinegar: 60g
- Sasagawa Nagare salt: 24g (Natural salt can also be used)
Umami seasoning: 26g
・White sesame: 20g
Mirin: 20g
<How to make>
1. Cut the avocado in half, remove the pit, peel it, and cut it into bite-sized pieces.
2. Mix sesame oil, vinegar, mirin, white sesame seeds, Sasagawa Nagare salt, and umami seasoning well to make the dressing.
3. Pour the sauce evenly over bite-sized pieces of avocado, top with shredded kelp, and it's ready!
Point: Using salt from Sasagawa Nagare will give it a richer and milder flavor.

Avocado is especially popular with women and is known as "the butter of the forest" because of its high nutritional value. The fragrant sesame oil flavor of the restaurant's original choregi salad dressing and the rich, creamy avocado spread in your mouth, and it pairs perfectly with the "Snow-Aged Junmai" sake, which is fresh yet flavorful! The umami and saltiness of the shredded kelp add a nice accent. We also recommend substituting it with Korean seaweed.
Avocado with kelp and sesame flavor: 550 yen (tax included)
And here's another recommended item from the restaurant!
Sado Red Snow Crab Miso Grilled in Shell: 1,380 yen (tax included)

This dish features red snow crab from "Yayoshimaru" in Sado, topped with homemade soy sauce-based mayonnaise, crab miso, and then grilled to a golden brown. The rich, oceanic flavor pairs perfectly with the smooth taste of "Snow-Aged Junmai" sake. We highly recommend enjoying it chilled.
