72nd Edition: [Suitei Toyozo] x Hiyaoroshi Junmai
Autumn is here! At Yoshinogawa Agricultural Products, we are nearing the end of the rice harvest. Compared to last year, there was no lodging and the rice grew smoothly! We are already looking forward to brewing with this year's new rice. At our brewery and the Yoshinogawa CoCoLo Niigata store at JR Niigata Station, we have a wide selection of sake perfect for the autumn season. In this season when sake tastes especially good, we are holding promotions not only in Niigata but also in various locations throughout the Tokyo metropolitan area to introduce you to our recommended sakes. Now, in this segment called "Tipsy OneDish," we visit restaurants and bars in Niigata Prefecture and ask them to come up with snacks that pair well with Yoshinogawa sake. The restaurant that will be preparing the dishes for us this time is located in Chuo Ward, Niigata City.Yoitei ToyozoThis is [Name of person/organization]. This time, they prepared dishes that pair well with "Hiyaoroshi Junmai" sake!
"Hiyaoroshi Junmai" is a type of sake brewed in winter, aged in tanks throughout the summer, and shipped in early autumn when the weather cools down. After about six months of aging, the flavor becomes rounder, and it has long been considered "the most delicious sake." It's a sake that can only be enjoyed in autumn, allowing you to savor the seasonal taste of Japanese sake.

And the person who will cook the meal:Yoitei Toyozo"Toyokura" is a modern Japanese-style izakaya located a 3-minute walk from the Bandai Exit of JR Niigata Station. The name of the restaurant, "Toyokura," comes from the owner's grandfather. It is a place where you can relax and enjoy seasonal dishes and drinks. On weekdays, it is full of business people, and on weekends, many families and customers from outside the prefecture come to the restaurant. They can accommodate groups of up to 20 people.

And this time, as a dish that pairs well with the Hiyaoroshi Junmai sake, we had them prepare "Shine Muscat grapes and figs in a white sesame dressing."
Now, let's get straight to the recipe!
The recipe is here ↓
★Material★

Shine Muscat grapes: as desired
Figs: to taste
Silken tofu: 1/3 block
White miso: 15g
Sugar: 8g
Soy sauce: 1 teaspoon
<How to make>
1. Wrap the silken tofu in kitchen paper and place a weight on it for about 15 minutes to remove excess moisture.
Point: Make sure to drain the moisture thoroughly!

2. Put the drained silken tofu, sugar, white miso, and soy sauce into a blender or hand blender and mix.
Point: Gently break up the tofu!

3. Mix the Shine Muscat grapes and figs with the tofu paste.
(Cut the figs into your desired size.)
Point: Use fruits with low moisture content!

4. Plate it and it's done!!

This dish can be served as both an appetizer and a dessert. Unlike a yogurt-based dish, the tofu is smoothly coated over the fruit, and the acidity of the fruit and the richness of the white miso create a perfect accent. This accent is a perfect match for the taste of Hiyaoroshi Junmai sake! It's a combination that brings out the freshness of the fruit. They also recommend using slightly firmer kiwi fruit, so please give it a try.
- White sesame dressing with Shine Muscat grapes and figs: 800 yen (tax included) *Limited time offer
And here's another recommended item from the restaurant!
Toyokura's Dashi-maki Tamago (Japanese rolled omelet): 1 roll 750 yen (tax included), half roll 450 yen (tax included)

Our signature dashi-maki tamago (rolled omelet) is made with plenty of kombu (kelp) broth seasoned with soy sauce and mirin, then grilled to perfection. Each omelet is made to order. We intentionally don't cut it when serving, so that the broth bursts out the moment you put your chopsticks in. After enjoying the flavorful kombu-broth omelet, try a glass of hiyaoroshi junmai sake, which has a clean taste but transforms into a mellow umami flavor. It's like experiencing the transition from summer to autumn. This exquisite fluffiness can only be achieved through the skill of a professional chef. Please enjoy it with sake at our restaurant.
