Now, in this segment called "Tipsy One Dish," we visit restaurants and bars in Niigata Prefecture and ask them to come up with snacks that pair well with Yoshinogawa sake. This time, the restaurant that will be preparing the dishes is located in Nagaoka City.Japanese Restaurant KonohanaThis is [Name of chef]. This time, he prepared dishes that pair well with the special junmai sake, Gokujo Yoshinogawa!

"Special Junmai Gokujo Yoshinogawa" is a junmai sake brewed using 100% locally grown, contract-cultivated sake rice [Gohyakumangoku], resulting in a rich flavor and aroma of rice. It has a full-bodied yet crisp finish, making it a sake you won't tire of drinking and leaving you wanting another glass. In 2019, it won the highest gold prize in the premium warm sake category at the National Warm Sake Contest. It is also recommended to enjoy it warm or chilled. Please enjoy it.

And the person who will cook the meal:Japanese Restaurant Konohana"[Restaurant Name]" is one of the few long-established Japanese restaurants in Nagaoka that has been in business for over 130 years. The fourth-generation owner, Tatsuo Numa, took over the business after training in kaiseki cuisine in Nishijin, Kyoto. Since his training, he has made it a point to use ingredients to the fullest extent, and since returning, he has been serving Japanese dishes such as "yosenabe" (a hot pot dish) that allows you to enjoy the dashi (broth) that his predecessor was so particular about, as well as fluffy, large "kakiage" (vegetable tempura) and "karaage" (fried chicken). He maintains his commitment to carefully preparing and serving each dish with heartfelt care after receiving an order from the customer.

For this occasion, we asked Mr. Tatsuo Numa, the fourth-generation owner, to prepare a dish that pairs well with the special junmai sake, Gokujo Yoshinogawa: "Shiitake mushrooms with grated daikon radish."

Now, let's get straight to the recipe!

★Ingredients★ (1 serving)

・Shiitake mushrooms: 1-2

・Yuzu: 1

・Bitter orange: 1

Salt: a pinch

<How to make>

Point: Be careful not to spill too much liquid!!

Point: Mix two types of citrus fruits!

4. Cut the shiitake mushrooms into bite-sized pieces, arrange them on a plate, and it's done!

The subtle saltiness of the shiitake mushrooms fills your mouth with umami, while the grated daikon radish mixed with two types of citrus fruits releases their respective sweetness, acidity, and refreshing aroma. The chopped yuzu adds an accent, and it pairs perfectly with the rich flavor of the special junmai sake, Gokujo Yoshinogawa. It's a refreshing dish that's easy to eat even when your stomach is tired from the New Year celebrations or when you don't have much of an appetite. This product is not sold in stores; the recipe is only available online. Please enjoy it at home.

And here's another recommended item from the restaurant!

・Scallops and potatoes wrapped in yuba (tofu skin) - 1,320 yen (tax included)

This dish is a popular item on the menu and can be enjoyed either à la carte or as part of a course meal. Crispy fried yuba (tofu skin) gives way to tender potatoes and scallops that spill out from within. The sauce is a colorful spinach sauce made with a white sauce base. This dish, with its Western-inspired Japanese flavor, pairs exceptionally well with our special junmai sake, Gokujo Yoshinogawa. Please come and enjoy it at our restaurant.
