78th Edition: [Kaisenya Negibouzu] x Ginjo Gokujo Yoshinogawa

March 3rd is Hinamatsuri (Girls' Day). At the Yoshinogawa Sake Museum Brewery, the Kawakami family's Hina dolls are on display as part of the Echigo Nagaoka Hina Monogatari (Echigo Nagaoka Doll Story). These dolls were made by Maruhei in Kyoto, and following the Kansai style of "Kyoto Hina," the male doll is on the right and the female doll is on the left. They will be on display at the entrance until mid-April, which is the third day of the third month of the lunar calendar, so please be sure to take a look when you visit.

Now, in this segment called "Tipsy OneDish," we visit restaurants and bars in Niigata Prefecture and ask them to come up with snacks that pair well with Yoshinogawa sake. The restaurant that will be preparing the dishes for us this time is located in Chuo Ward, Niigata City.Seafood Restaurant NegibouzuThis is [Name of chef]. This time, he prepared dishes that pair well with the premium Ginjo Yoshinogawa sake!

"Ginjo Gokujo Yoshinogawa" is a sake that has continued the "ginjo brewing" method, considered the foundation of sake brewing, even during the post-war era when rice was scarce, passing down its techniques. It is a special ginjo sake brewed using 100% locally contract-grown sake rice [Gohyakumangoku]. Its gentle ginjo aroma and clear, refreshing taste will impress even the most discerning sake connoisseurs.

And the person who prepared this meal for us wasSeafood Restaurant Negibouzu"[Restaurant Name]" is a restaurant where you can enjoy Niigata's seafood and local sake. The menu changes daily depending on the day's catch, and you can enjoy fresh seafood and local sake that will captivate both business travelers and locals alike. They source their seafood not only from Niigata's fish market but also directly from Ryotsu Port in Sado, so they can offer seafood that you may not normally encounter. They can accommodate up to 60 people and are located right outside the south exit of JR Niigata Station. You can experience the deliciousness of Niigata, so please come and visit.

This time, we asked Chef Takahashi to prepare a dish that would pair well with the premium Ginjo Yoshinogawa sake: "Sashimi of cherry snapper cured in kelp." I was surprised by how simple it was—just this much!? I wouldn't have known how simple it was if he hadn't revealed the secret.

Now, let's get straight to the recipe!

★Ingredients★ (1 serving)

・Kelp: 1 piece *Rishiri kelp used

<How to make>

Tip: To save time, use a sashimi platter and choose only white fish!

Point: It's OK to place the topping on only one side of the kelp.

The title of this recipe is "Just put it on top and wait"!

The umami of the kelp coats the light white fish, creating a sticky texture that pairs perfectly with the refreshing aroma and crisp, dry taste of Ginjo Gokujo Yoshinogawa sake! By having the kelp in contact with only one side of the fish, the colors look beautiful when plated. Adding pickled plum paste and wasabi as condiments will give it a nice accent, so we recommend it. You can elevate a supermarket sashimi platter to the next level! It is said to be delicious with squid and salmon as well, so please try it at home. It will be available for a limited time at our restaurant. Please enjoy it while also enjoying the atmosphere of our restaurant.

・Sashimi of cherry snapper cured in kelp: 1,408 yen (tax included) *Limited time offer

And here's another recommended item from the restaurant!

・Special Selection Sado Island Nigiri Sushi <Takumi> 3,278 yen (tax included) ~ *Ingredients and price may change depending on availability.

(At the time of filming: Blackthroat seaperch, Botan shrimp, Pufferfish, Southern bluefin tuna, Sea urchin, Line-caught golden snapper, Crab miso salad, Boiled conger eel, Spiny lobster roll)

This dish is a popular menu item at the restaurant and is only available at Negibouzu, with a limit of 10 servings per day. The white fish sushi, served with seaweed salt, is exquisite, and the clean taste of the premium Yoshinogawa sake further enhances its flavor. Please enjoy it while appreciating its compatibility with the sake.
