82nd Edition: [Delicious Side Dishes, Occasionally Oden - Local Dining Wadano] × Nomigoro Junmai Sake (Sake that can be enjoyed to the last drop)

This year's rainy season ended early across the country, making it hard to believe it even happened. Hot days have continued since June, and even in July, there have been days in Nagaoka where the minimum temperature hasn't dropped below 25℃. While water shortages are a concern for Yoshinogawa Agricultural Products' rice cultivation, the rice is growing well so far! We hope it continues to grow steadily until the autumn harvest.

And next month it's finally time for the Nagaoka Grand Fireworks Festival! If you're using Niigata Station, please visit "Yoshinogawa CoCoLo Niigata Store," and if you're staying in Nagaoka, please visit "Yoshinogawa Sake Museum Jozo"! You're guaranteed to find some wonderful sake!

Now, in this "Tipsy One Dish" corner, we visit restaurants and bars in Niigata Prefecture and ask them to come up with snacks that pair well with Yoshinogawa sake. This time, the restaurant that will be preparing the dishes for us is "Delicious Side Dishes, Sometimes Oden Local Dining Wadano" in Nagata, Nagaoka City. They have prepared dishes that will go well with Nomigoro Junmai Nomikiri!

Nomigoro Junmai Nomikiri is a raw, unpasteurized sake that received the highest rating among the junmai sakes at the brewery's important "Hatsu Nomikiri" (first tasting) event held in June. It is a sake that sake professionals from both inside and outside the company have judged to be "ready to drink" from among the junmai sakes stored in Yoshinogawa's tanks. When chilled, it has a refreshing taste and a light flavor that is surprisingly different from that of unpasteurized sake. Please enjoy this year's Nomigoro Junmai Nomikiri.

The dishes for this event were prepared by "Oishii Okazu, Tokidoki Oden Local Dining Wadano," which opened in January of this year. They decided to make oden their main menu item after receiving a great response when they served it at an event. They offer a variety of dishes that are not limited to Japanese cuisine, and because the restaurant is located in a residential area, it is often used by locals for lunch.

This time, we asked proprietress Etsuko Wada to prepare a dish that pairs well with our Nomigoro Junmai sake, "Edamame Pickled in Dashi Broth." This summer, you'll definitely want to compare this with boiled edamame!

Now, let's get straight to the recipe!

★Material★

Edamame: 300g

<Broth>

Salt: 5g

Soy sauce: 20g

・Dried bonito flakes: 2-3g

Umami seasoning: 5g

<How to make>

POINT: By rubbing raw edamame with salt, the fine hairs are removed and the edamame gains a salty flavor.

It's recommended to boil them thoroughly so that they absorb the broth.

POINT: If you don't have bonito powder, microwave bonito flakes for about 30 seconds to make a powder.

POINT: It can be stored in the refrigerator for about a week.

The star of this episode is edamame, a quintessential summer ingredient. Nagaoka isWorld Edamame Eating ContestNiigata is truly a "land of edamame," so much so that events like the Edamame Festival are held there. From May to October, various varieties appear depending on the season. Each variety has a different aroma, sweetness, and texture, so you can enjoy the unique flavors of each time of year. A huge pile of edamame appearing on the dinner table is also a quintessential Niigata sight.

The classic way to eat edamame is boiled in salt water, but this "dashi-pickled" version is sure to be addictive for both children and adults. By pickling them in their pods, the moment you bite into them, the dashi broth bursts out, filling your mouth with the delicious flavor of the edamame. It's so delicious you'll want to keep slurping the broth. Pairing it with a crisp, fresh Junmai sake enhances the flavor even more, offering a light taste that will make you forget the summer heat and humidity. This will be available in our restaurant as a limited-time summer menu item! Come visit us to experience the taste of summer this year.

This signature dish of the restaurant features ingredients that change daily and is served as a platter of 5 to 6 items. The broth, flavored with bonito and kelp, permeates the thick slices of daikon radish and konjac, making you want to reach for a drink.
