84th Edition: [Restaurant Higashichu] x Hiyaoroshi Junmai

Although the hot days continue, the mornings and evenings are starting to feel a little cooler. At Yoshinogawa Agricultural Products, the "Gohyakumangoku" rice harvest is currently underway. Soon, trucks loaded with the new rice will begin coming in and out of the premises, and the wonderful aroma of steamed rice will start to waft from the brewery. We can't contain our excitement! This year's "new rice brewed new sake" is scheduled to be released from the brewery in late October. It will be available at the brewery and at the Yoshinogawa CoCoLo Niigata store at JR Niigata Station, so please stop by. Let's enjoy the "autumn of appetite and autumn of drinking" with Yoshinogawa this autumn as well!

Now, in this segment called "Tipsy One Dish," we visit restaurants and bars in Niigata Prefecture and ask them to come up with snacks that pair well with Yoshinogawa sake. This time, the restaurant that will be preparing the dishes is located in Ojiya City.Ryotei HigashichuThis is [Name of person/organization]. This time, they prepared dishes that pair well with Hiyaoroshi Junmai sake!

"Hiyaoroshi Junmai" is a type of sake brewed in winter, aged in tanks throughout the summer, and shipped in early autumn when the weather cools down. After about six months of aging, the flavor becomes rounder, and it has long been considered "the most delicious sake." Please enjoy this seasonal sake, available only in autumn.

The chef who prepared the dishes for this occasion was from the long-established restaurant in Ojiya City.Ryotei HigashichuThis is [restaurant name]. The building is a registered tangible cultural property of Japan and is a historic three-story wooden restaurant that is 280 years old. The building itself is interesting, but what's really appealing is that you can see the room that Kawai Tsuginosuke, a chief retainer of the Nagaoka Domain during the late Edo period, used for lunch. It is very appealing to be able to enjoy delicious food while feeling the history and culture. Dinner is by reservation only, so it is recommended to enjoy it casually at lunchtime or as a cafe first.

This time, we asked Chef Yosuke Sato to create a dish that pairs well with Hiyaoroshi Junmai sake: "Ryotei-style Japanese Potato Salad." While it's not available at the restaurant, it's an easy recipe that adds just a little extra touch to a familiar dish.

Now, let's get straight to the recipe!

POINT: Make sure to drain the water thoroughly here as well!

The addition of mustard gives this potato salad a Japanese twist, while the aroma and crispy texture of smoked pickled radish add a delightful accent. The rich flavor of cream cheese further elevates this ordinary potato salad. The mellow taste and umami of a well-chilled "Hiyaoroshi Junmai" sake further enhance the flavor. This is not available for sale in stores, so please try making it at home! We hope you enjoy the autumn season, a time for both delicious food and drinks.

And here's another recommendation from the shop!!

• Rolled omelet with Niigata Wagyu beef simmered in soy sauce

*Individual items are not available. The photos are for illustrative purposes only.

This dish features dashi-rolled omelet sandwiched with Niigata Wagyu beef simmered in a sweet and savory sauce, a specialty of this high-class restaurant. The generous portion and the rich umami of the dashi broth create a synergistic effect with the flavor of the Hiyaoroshi Junmai sake. We also recommend eating it with grated daikon radish mixed with shichimi spice, which adds a refreshing kick and a hint of spiciness. Throughout September, you can enjoy this dish as a special treat by mentioning that you saw it on "SumaSta". Please take this opportunity to enjoy the restaurant's atmosphere along with the Hiyaoroshi Junmai sake.
