86th Edition: [Sado Fish and Murakami Beef - Nagaoka Kamakura Main Store] × Newly Brewed Junmai Sake
Autumn is well underway. Are you all enjoying delicious drinks and autumn delicacies?
At Yoshinogawa, the sake we're introducing today, "New Rice Brewed New Sake Junmai," was released from the brewery late last month. It's a popular sake that many people look forward to every year. This time of year, delicious ingredients are appearing one after another, making it hard to decide which to pair with it. At the brewery and Yoshinogawa CoCoLo Niigata store, we have a drink ready for you tonight. Please stop by.

The process of making the "sugidama" (cedar ball), a marker used at sake breweries to indicate the arrival of new sake, is available on YouTube 👇 so please check it out!
Now, in this segment called "Tipsy OneDish," we visit restaurants and bars in Niigata Prefecture and ask them to come up with snacks that pair well with Yoshinogawa sake. This time, the restaurant that will be preparing the dishes is located at Nagaoka Station.Sado fish and Murakami beef, Nagaoka Kamakura Main StoreThis is [Name of person/organization]. This time, they prepared dishes that pair well with the new sake made from newly harvested rice!
This new sake, made with newly harvested rice from Niigata Prefecture, is a pure rice sake brewed using the freshest rice harvested this autumn. It's carefully brewed using this year's rice, taking into account its unique characteristics to bring out the sweetness, umami, and freshness of the rice. It boasts the crisp, clean finish characteristic of Yoshinogawa sake, while also possessing a pleasant sweetness. Enjoy it with the flavors of autumn.

The chef who prepared the dishes for this occasion was from Nagaoka City.Sado fish and Murakami beef, Nagaoka Kamakura Main StoreThis is "[Restaurant Name]". As the name suggests, it's popular with business travelers and seniors alike because you can enjoy dishes made with fish from Sado Island, Murakami beef, and seasonal local ingredients, along with delicious drinks, all right inside the train station.

This time, we asked manager Go Sekiguchi to prepare a dish that would pair well with the new sake brewed from newly harvested rice, called "Kamakura-style Soup Curry." It's an authentic spice soup curry with a strong Japanese dashi broth, which is hard to believe is just a staff meal at the restaurant.

Now, let's get straight to the recipe!
★Ingredients★ (4 servings)

Lotus root: 1
Potatoes: 8
・ Paprika: 1
Green beans: 8
Sweet potato: 1
Turnip: 1
<For soup curry>
• Onion: 1
Chicken drumsticks: 8 pieces
Curry powder: 70g
Cumin seeds: a small amount
Japanese-style broth: 1,000L
Olive oil: appropriate amount
<How to make>
1. Add olive oil to a heated frying pan, infuse it with cumin seeds, and brown the chicken drumsticks.

2. Sauté the minced onion until it turns amber.

3. Put 1 and 2 into a pot, add Japanese-style dashi stock, mix well, then strain. Add curry powder and simmer slowly.

4. Serve with the grilled vegetables and it's done!

This staff meal is a popular menu item that is frequently requested by the restaurant staff and is so delicious that you'll be hooked after just one bite. Adding garam masala, cinnamon, and your favorite spices will elevate it even further. The spicy aroma of cumin seeds brings out the umami of the meat even more, and the sweetness of the onions melts into the soup, allowing you to enjoy the fresh taste and flavor of "Shinmai-jikomi Shinshu Junmai" even more. As this is a "staff meal," it is not available to eat at the restaurant, but please enjoy this "adult soup curry" at home with plenty of seasonal vegetables.
And here's another recommendation from the shop!!
• Assorted sashimi (7 kinds) (for two people) ¥2,277 (tax included)

(At the time of filming: Red sea bream, Indian tuna (lean and fatty cuts), Greater amberjack, Sado shrimp, flounder, octopus)
The restaurant's sashimi platter is a popular choice among many customers. The ingredients vary depending on what's available, but they always source seasonal fish. The generous portions feature fish mainly from Sado and Niigata, and the fatty tuna in particular pairs perfectly with the fresh taste of the newly brewed junmai sake, which cleanses the palate of the richness and allows you to enjoy the next, lighter piece even more. Be sure to try it at the restaurant!
