91st Edition: [Charcoal Grilled Cuisine Yumedori-tei] x Ginjo Gokujo Yoshinogawa
With April here, many of you have probably started new lives in new environments, haven't you? This year, Nagaoka has been unusually warm, and as if to celebrate the new beginnings, the cherry blossoms on campus have suddenly come into full bloom. Please enjoy a stroll around Settsuya and feel the arrival of spring.

This year too, on Saturday, April 18th,“Yoshinogawa Brewery Open House”We will be holding the event! With the slogan "Come, see, drink, and explore," we hope you will enjoy a springtime experience at Setagaya Hiyori. Please come and join us!
Now, in this "Tipsy One Dish" corner, we visit restaurants and bars in Niigata Prefecture and ask them to come up with snacks that pair well with Yoshinogawa sake. This time, the restaurant that will be preparing the dishes for us is "Sumibi Ryori Yumedori-tei" in Jonai-cho, Nagaoka City. They have prepared dishes that go perfectly with Ginjo Gokujo Yoshinogawa!

The restaurant that prepared the dishes for this feature, "Sumibi Ryori Yumedori-tei," opened last February in a prime location just a short walk from JR Nagaoka Station. It's a heartwarming charcoal-grilled restaurant run by the owner, his mother, and his younger brother. In addition to chicken dishes using the exceptionally fresh "Koshi no Tori" chicken from Niigata, the hidden stars are the homemade "umeboshi" (pickled plums) and "oshinko" (pickled vegetables) made by the owner's mother. Its proximity to the station makes it perfect for a drink after work or a family get-together. Why not enjoy their carefully crafted flavors in a warm and welcoming atmosphere?

This time, we asked them to prepare "overnight-dried chicken thighs" as a dish that would pair well with the premium Ginjo Yoshinogawa sake.
Now, let's get straight to the recipe!
★Material★

• Chicken thigh: 1 piece
Olive oil: 2 tablespoons
Salt: to taste (10% of the meat weight)
• Sliced lemon: appropriate amount
Pepper: to taste
Wasabi: appropriate amount
<How to make>
1. Cut off any tendons and excess fat from the ankle area of the thigh meat.

2. Sprinkle salt over the surface of the meat, rubbing it in with your hands, and let it rest in the refrigerator overnight.
POINT: No rapping!

3. Add olive oil to a heated frying pan, and cook the chicken skin-side down. Once it turns golden brown, flip it over and steam-cook it.
POINT: Let the meat come to room temperature before grilling it over high heat!

4. Once plated, it's done!!

The "overnight-dried fish," carefully prepared using a recipe passed down from the shop, boasts a crispy skin and juicy flesh. Enjoying it with the accompanying wasabi and lemon allows you to further appreciate the clear and refreshing Ginjo Yoshinogawa sake. Interspersing it with the shop owner's mother's homemade pickles will make the sake go down even more easily! Enjoy the fragrant aroma of high-quality meat grilled slowly over charcoal. Spend a truly satisfying time watching the skewers being grilled across the counter while engaging in lively conversation with the shop owner.
Dried chicken thighs (overnight drying): 770 yen (tax included)
And here's another recommended item from the restaurant!
Standard set: 1,540 yen (tax included)

(Chicken gizzards, chicken neck, chicken and green onion skewers)
This dish is the restaurant's popular "Standard Set." The smoky aroma of charcoal grilling and the refreshing scent of Ginjo Yoshinogawa sake blend beautifully in your mouth. The crisp, dry taste of the sake enhances the flavor of the chicken fat, making it even more delicious. We have many other dishes on the menu, so please come and enjoy them at our restaurant.
