The 92nd edition of [Sake and Food Gathering Kishin] x Ginjo Gokujo Yoshinogawa
As May begins, Settsuya in Nagaoka City shines even brighter. The traces of winter from just a few months ago are nowhere to be seen; a refreshing breeze carrying the scent of young leaves blows through the grounds along with the steam from the steamed rice. There are days when you need a jacket when the sun goes down, but it is warm during the day, and the weather is pleasant enough to make you sweat a little while strolling around. A walk while enjoying a drink at the brewery is a truly luxurious experience.
At Yoshinogawa CoCoLo Niigata, located at JR Niigata Station, we also offer a selection of sake perfect as souvenirs. We look forward to welcoming you to either store.

Now, in this corner, "Tipsy OneDish," we visit restaurants and bars in Niigata Prefecture and ask them to come up with snacks that pair well with Yoshinogawa sake. The restaurant that will be preparing the dishes for us this time is located in Daimachi, Nagaoka City.Sake and snacks gathering KishinThis is Mr./Ms. [Name]. This time, they prepared dishes that pair well with the premium Ginjo Yoshinogawa sake.

The restaurant that prepared the dishes for this occasion, "Sakana Danran Kishin," is a popular spot located a 5-minute walk from the east exit of JR Nagaoka Station. You can enjoy local fish and vegetables paired with local sake, and the restaurant is frequented not only by locals but also by regulars from outside the prefecture. It is popular with female customers and business entertaining, and is often fully booked even on weekdays, so advance reservations are recommended.

This time, we asked them to prepare "Spring Roll Duet," a dish that pairs well with the premium Ginjo Yoshinogawa sake. The key to this dish is the way the rolls are made.
Now, let's get straight to the recipe!
★Ingredients★ (for 8 servings)

<Bamboo shoot spring rolls>
Spring roll wrappers: 10 sheets
・Boiled bamboo shoots (thinly sliced): 150g
Carrots (julienned): 50g
Seafood mix: 100g
4 slices of cheese
Salt: a pinch
• Pepper: a pinch
Soy sauce: 1 teaspoon
• Sake: 1 teaspoon
• Salad oil: 1 tablespoon
• Flour dissolved in water (for making a paste): appropriate amount
<Wild vegetable spring rolls>
Spring roll wrappers: 10 sheets
Wild vegetables: 300g
・Bacon (thinly sliced): 50g
・Sesame oil: 1 teaspoon
・Miso: 2 tablespoons
Mirin: 1 tablespoon
• Sake: 1 tablespoon
• Sugar: 1 teaspoon
・Ground sesame seeds: 1 tablespoon
• Flour dissolved in water (for making a paste): appropriate amount
<Instructions> (for bamboo shoots)
1. Cut the bamboo shoots and carrots into thin strips.

2. Heat a frying pan, add salad oil, and stir-fry the seafood mix, julienned bamboo shoots, and carrots. Season well with sesame oil, salt, and pepper.
POINT: Make sure to let the seasoned ingredients cool completely.

3. Cut one spring roll wrapper into four equal parts, place one in the center of another wrapper, and then add the filling and sliced cheese on top.
POINT: When adding the filling, double the spring roll wrapper! Be careful, as the wrapper will become soggy and tear easily when you wrap hot fillings in it.

4. Fold in both sides, then fold the bottom skin towards the center to enclose it, and finally seal it with a paste made of flour and water.

5. Deep-fry in oil at a high temperature of 170-180°C until the batter turns golden brown.

6. Once plated, it's done!!

Enjoy the full flavor of spring with our "Spring Spring Rolls." One dish features the delightful texture of bamboo shoots complemented by the richness of cheese, while another envelops the slightly bitter taste of wild vegetables in miso. Pair them with premium Ginjo Yoshinogawa sake. The crisp finish of the sake perfectly complements the fragrant crispness of the fried wrapper, creating a truly luxurious moment. The sake also cleanses the palate of the oil, allowing you to fully appreciate its dry flavor. We recommend making a slightly larger batch and freezing the leftovers for your lunchbox. These are available for a limited time at our restaurant, so please be sure to enjoy them.
• Spring Roll Duet: 800 yen (tax included) *Limited time offer
And here's another recommended item from the restaurant!
• Yairo Shiitake Mushroom Steak: 900 yen (tax included)

This dish is the restaurant's popular menu item, "Yairo Shiitake Steak." Owner Suenobu Shinada personally visits farmers in Minamiuonuma and carefully selects only the largest and thickest shiitake mushrooms. This dish combines homemade sauce, ginger-flavored meatballs, and the rich umami of the shiitake mushrooms. The crisp finish and gentle aroma of Ginjo Gokujo Yoshinogawa sake enhance the flavor of the ingredients. The charm of local flavors and sake is expressed on the plate. We also recommend dipping it in egg yolk. Please enjoy it at the restaurant.
