The 47th installment: [Ramen Tanaka] x Ginjo Gokujo Yoshinogawa
The "Shosanshaku-dama" fireworks at the Nagaoka Festival Grand Fireworks Display went up beautifully!!
At Yoshinogawa, we provide the "Shosanshaku-dama" (a large, three-foot diameter firework) for the Nagaoka Festival Grand Fireworks Display, held every year on August 2nd. This year, it was our first time back in three years, and it really felt like Nagaoka's hot summer had returned. Many customers who were going to the Nagaoka Festival also visited our brewery, and it seems they were able to enjoy a tipsy feeling before the call of "Let's start the fireworks!!" was made. Thank you very much.

Now, in this segment, we visit restaurants and bars in Niigata Prefecture and ask them to come up with snacks that pair well with Yoshinogawa sake.Tipsy OneDish」。This month in Chuo Ward, Niigata CityIt is located"Ramen Tanaka"To Mr."Ginjo Gokujo Yoshinogawa"」They prepared dishes that would go well with it! This time too, 2-3This is an easy recipe that only requires marinating for a few days. So, let's start with the alcohol...

This time's alcohol"Ginjo Gokujo Yoshinogawa"」This sake was created with the aim of allowing drinkers to truly experience the wonderful qualities of Japanese sake in their daily lives. Using 100% carefully selected Gohyakumangoku rice from Niigata Prefecture, it boasts a subtly sweet, gentle ginjo aroma and a clear, refreshing taste. Even now, more than 30 years after its release, it continues to impress sake connoisseurs.
And then they introduce the dishesRamen TanakaThis ramen shop just opened on July 1st, 2022, and boasts a wide selection of alcoholic beverages.

The owner, Takaya Tanaka, ran a ramen shop in his hometown of Akiha Ward for about 10 years, and is now a young entrepreneur who manages two restaurants while working as a company employee. This particular restaurant opened in response to requests from his regular customers. This time, Hidehito Tamura, who is also a junior of Tanaka's from his student days, introduced us to the dishes.
Ms. Tamura, who loves cooking and enjoys experimenting with different recipes, had a big smile on her face, which was very memorable. Her serious expression as she cooked, focusing on each dish, was wonderful. Now, let's introduce the dishes prepared this time!
The dishes to pair with this drink are:Tofu pickled in misoThat's it! It's an easy dish that can be made by marinating for 2-3 days!
The recipe is here ↓
★Ingredients★ (2 servings)
Firm tofu: 1 block (300g)
White miso: 50g
・Mirin: 50cc
Soy sauce: appropriate amount
・Dried bonito flakes: a small amount
condiments
・Shiso leaves: as appropriate
Japanese ginger (myoga): as needed

★Recipe★
1. Mix the white miso with mirin, bonito flakes, and soy sauce.

2. Place a weight on the firm tofu and refrigerate it for about half a day to remove excess moisture.

3. Spread miso evenly over the drained tofu and let it sit in the refrigerator for 2-3 days to allow the miso to soak in.

4. After letting the firm tofu rest, lightly remove the miso, rinse it with water, and thoroughly dry it with kitchen paper.

5. Top with Japanese ginger and chopped shiso leaves and it's done!!

The deep umami of the miso is thoroughly absorbed into the firm tofu, resulting in a smooth and rich flavor that pairs perfectly with the refreshing aroma and crispness of this premium Yoshinogawa sake. It's so delicious that you could easily eat an entire block of tofu by yourself. It's great as a snack with sake, but also highly recommended as a side dish with rice.

② These are specially made, chewy, green chlorella noodles!
③ Chicken ham made by slow-cooking chicken breast for about two hours to create a moist, tender, and juicy texture!
Our chicken ham, which will make you want to order more, is available on our appetizer menu!
