I visited restaurants and bars in Niigata Prefecture.
This is a segment where we ask you to come up with snacks that would pair well with Yoshinogawa sake!

We'd like you to consider recipes that you can try at home.

The fourth installment features a long-established soba restaurant in Nagaoka City.Nagaoka Kojimaya Main StoreIt's you!

The Nagaoka main store just reopened after renovations on December 19th of last year.
Established 50 years ago, it continues to be loved in Nagaoka.
This soba restaurant specializes in Echigo's famous hegi soba noodles and local sake.

Here, we have a higher-grade sake from Yoshinogawa.
Using "Ginjo Gokujo Yoshinogawa",

We asked our head chef, Mr. Yamagishi, to prepare some appetizers that would go well with it!

This time's menu features a dish using duck, which is in season right now.
[Duck and leek grilled with wasabi]is!

Instructions are below ↓

<Ingredients (1 serving)>

• Duck: 3 slices
• Soy sauce (dark): 80g
Granulated sugar: 80g
Mirin: 10g
Wasabi: a small amount

<Preparation>

Combine the soy sauce, granulated sugar, and mirin to make the sauce.

① Cut the green onions into chunks and sauté them in a pan with oil.

② Sauté the duck on both sides.

③ Add cooking sake (regular sake such as carefully selected dry sake is acceptable) to remove the gamey smell from the duck.

④ Pour the prepared sauce over the ingredients and cook briefly.

⑤ Arrange the food on a plate.

Finally, add some wasabi and it's done!!

Duck, which is in season right now, is fatty and sweet, and when you add wasabi to it...
It has a refreshing sweet and spicy flavor.!

When paired with Ginjo Gokujo Yoshinogawa sake, the duck fat takes on an elegant and rich flavor.
Ginjo sake and duck are a perfect match!!

Please try this as a snack to enjoy with your evening drink!

At Nagaoka Kojimaya Honten, they have "Duck and Green Onion Grill with Wasabi".
