The first tasting took place today!

Today, Showa Brewery held its major summer event, the "First Sake Tasting Ceremony"!

"Nomi-kiri" refers to opening (cutting) the spout, called a "nomi," on the tank in which the alcohol is stored.

We drain the alcohol from each of the more than 60 tanks, both large and small, and check their condition.

Every year at this time, we check the overall balance of the sake, including its taste, aroma, and maturation, for each tank.

The purpose is to determine when the alcohol in that tank is ready to drink.

In addition to departments involved in manufacturing, employees with exceptional sake-tasting abilities, known as "panelers,"

We carefully examine each bottle of sake, recording its quality and characteristics in a document.

It takes time and effort to taste each and every bottle of sake stored in the many tanks.

For sake tasting, a large sake cup with a snake-eye pattern is used.

The white part of the snake's eye pattern on this sake cup is used for the sake.transparencyCheck " and
The blue part is the sakeglossThey check for that. In addition, they also look at things like the scent and how the water surface is rippling.

Everyone is facing their drinks with a serious expression.

Because there's so much to sample, the tasting takes a whole day!

If I swallowed it every time, I'd get drunk in no time.

Take a small sip, taste it, and then spit it out.

In order to deliver delicious sake to everyone, the "drinking ceremony" is an indispensable event.

The evaluation process is also taken very seriously.

And the junmai sake that received the highest rating in this "first taste test" is...

We're commercializing this product because it's "the perfect sake to drink right now."

Since it's unpasteurized and bottled, it's exactly the taste that's been sleeping in the tank, released straight from the brewery!

This year, the special junmai sake from tank No. 511 has been selected!
