25th Edition: Kappo Akatsuki x Junmai Daiginjo 50 PAIR & Daiginjo 50 PAIR

With a clear, sunny sky and pampas grass swaying in the wind, it's the heart of autumn!

I want to enjoy the autumn ingredients, which have become even more delicious!

With that in mind, I visited a shop located in Bandai, Niigata City.

"Akatsuki," a Japanese restaurant specializing in traditional Japanese cuisine.

A long-established shop founded in 1976, a place of relaxation for the citizens of Niigata.

A charming door, a purple curtain, and a handwritten menu.

The shop's mouthwatering appearance is so appealing that it's enough to make you hungry just by passing by!

Mr. Kuwahara, the owner, is the second generation of the shop.

Dishes that make the most of seasonal ingredients, created with delicate techniques.

The rich, savory flavors make you want to sigh with contentment.

Of course, it's a popular restaurant that's always bustling with regulars.

Now, the drink we'll be discussing today is the one that was just released on September 28th, "Junmai Daiginjo 50 PAIR"and"Daiginjo 50 PAIR」!

This is a new product in the PAIR series, brewed with the theme of "pairing," connecting things and experiences through alcohol.

The owner, who had tasted the sake beforehand, said, "This is it!" and made this dish for us.

"Deep-fried saury with plum and shiso leaves"

===============================

★Ingredients★ (1 serving)

・Pacific saury: 1 half fillet

- Mashed plums: appropriate amount (tube-type plum paste is OK)

・Shiso leaves: 1 rice

King oyster mushroom: 1

Fig: 1/2 small

・Shishito pepper: 1

Sweet potato: 1 slice, 1cm thick

・Silver: 2 pieces

・Flour: Appropriate amount

・Water: Appropriate amount

• Salad oil: appropriate amount

• Rock salt: appropriate amount

*You can use any vegetables other than the saury.

*Sardines can be used as a substitute for saury.

★Recipe★

1.Fillet the saury and cut it in half.

Remove excess moisture

2.Place a shiso leaf on top of the saury, spread plum paste on top of the shiso, and roll it up vertically from one end.

Secure the end with a toothpick.

3.Dust the saury and other vegetables with flour.

4.Put salad oil in a pan and heat to 170°C.

Point: Since rolling up the saury will make it thicker, set the temperature lower.

5.Mix flour and water to make tempura batter, then dip the ingredients in the batter and deep fry them.

6.Remove the cooked items as they are finished cooking.

After removing the saury, let it sit for about 2 minutes to allow the residual heat to cook it through.

Point: Cooking with residual heat results in a moist finish and brings out the best in the ingredients.

7.Remove the toothpick, cut the saury in half lengthwise, and arrange it on a plate with the other ingredients.

Serve with rock salt to taste.

Completed!

The juicy, flavorful taste of fresh, fatty Pacific saury is refreshingly complemented by shiso leaves and pickled plums!

The contrast in texture between the fluffy, hot batter and the moist, tender flesh is also enjoyable.

If you take a big gulp of Junmai Daiginjo 50 PAIR

The savory flavor and gentle aftertaste spread softly, and combined with the fat of the saury, it truly tastes like happiness.

As expected of Akatsuki-san! Thank you for the wonderful pairing!

And there's another type,Daiginjo 50 PAIRThey prepared a dish that was a perfect match for it.

"Japanese-style stewed beef tongue"

Beef tongue that has been boiled until it is so tender that it can be easily cut with chopsticks

A dish that can only be enjoyed at Akatsuki, with the ingredients thoroughly soaked in a Japanese-style broth.

You're sure to discover a whole new side to beef tongue!

Of course, it pairs perfectly with sake.

Thank you for the delicious food and wonderful time.

Finally, we took a commemorative photo together.

I highly recommend that everyone experience the joy of matching rings at "Akatsuki"!

See you next time!
