The 27th [Kaisen Robata Issei Nagaoka Store] x Junmai Daiginjo 50 PAIR
The days are getting shorter, and snow symbols are starting to appear in weather forecasts.
There are only about three weeks left in the year.
This time, we're looking for a restaurant with a spacious interior and private rooms of various sizes where you can enjoy fresh local fish prepared right in front of you.
This is "Kaisen Robata Issei Nagaoka Store"!
At this store,
If you sit at the counter, the food will be served to you using a tool called a "hera" (spatula) in the restaurant.
During this time, essential measures to prevent the spread of infectious diseases are being taken thoroughly.
The sake we'll be enjoying this time at Issei, a robatayaki restaurant that delivers fresh ingredients all the way from Nagaoka, is...
Enjoy pairing with your mealJunmai Daiginjo 50 PAIR」!
This is a Junmai Daiginjo sake brewed with sake rice grown in Niigata Prefecture.
A sake with a refreshing and gentle ginjo aroma, and a flavor that brings out the deliciousness of rice.
We were introduced to a variety of dishes that allow you to easily enjoy the restaurant's flavors at home.
It's actually incredibly simple, but when you taste it, it transforms into a dish that looks like it took a lot of effort to make!
It's not too late; how about this as an appetizer for today?
"Sea bream instantly cured with kelp"
===============================
★Ingredients★ (1 serving)
- Sea bream fillets: about 5 slices (10g) *This time we used locally sourced sea bream from Izumozaki.
Kombu tea (granules): 3g
• Water: 6g *Please use cold water, not hot water, as this is for soaking the fish fillets.
condiments
・Shredded ginger: 2g
・Kelp: 5g
・Plum meat: 2g
★Recipe★
1.Mix the kelp tea and water well.
Point: Make sure to use "water" to soak the fresh fish!!
2. Dip the sea bream fillets in kelp tea dissolved in water and arrange them on a paper towel.
3.Next, place a paper towel on top to absorb any remaining moisture.
Point: Moisture is the enemy of fresh fish!!
4. Finally, arrange it nicely on a plate and it's done!!
This time, the condiments are Japanese ginger, kelp, and pickled plum paste.
This instant kelp curing method can be used as a substitute for any white fish.
Please try it with your favorite white fish as well.
And one more item, a popular menu item that you can enjoy in-store or take out.
"Exquisite boiled egg roll"
It's served on a plate, practically dancing around like a cake.
Layers of thin omelets, like a mille-feuille,
The dish has a sweet seasoning, and then a sweet sauce (like yakitori sauce) is added on top.
The eggs are seasoned with bonito broth, sugar, soy sauce, and salt.
You can also enjoy it at home with eel sauce.
The shops were specially designed for this occasion.
The instant kelp-cured sea bream comes as a set with Yoshinogawa Junmai Daiginjo 50 PAIR.
It will be available as a limited-time product at the Nagaoka store, called the "Smile Stadium Set".
