The 42nd edition of [Kappo Kamata] x Junmai Ginjo (unfiltered sake) made with their own cultivated rice "Gohyakumangoku" & Irizake
It's the season when you can feel the breath of spring! Are you all enjoying some delicious drinks?
March 3rd was Hinamatsuri (Girls' Day). The Kawakami family's Hina dolls were displayed at the brewery! The cherry blossom season is slowly approaching.

Now, we'll visit restaurants and bars in Niigata Prefecture and ask them to come up with snacks that would pair well with Yoshinogawa sake.Tipsy OnedishThis time...It is located in Itakura Ward, Joetsu City.Kappo KamataTo Mr.Our own cultivated rice "Gohyakumangoku" Junmai Ginjo (unfiltered, unpasteurized sake)>They prepared a dish that was perfect for it!
Our own cultivated rice "Gohyakumangoku" Junmai Ginjo (unfiltered, unpasteurized sake)This sake is produced by Yoshinogawa, who has handled everything from rice cultivation to sake brewing. It is a junmai ginjo sake brewed with "Gohyakumangoku" sake rice grown by Yoshinogawa Agricultural Products. After pressing, it is not filtered and is bottled after only one pasteurization. This sake truly embodies the terroir of Nagaoka, utilizing the advantages of the Echigo Nagaoka region to grow the rice and brew the sake.

Kappo KamataAs you can see from the sign, this restaurant specializes in crab and seafood dishes. The owner, Mr. Kamada, is a fish lover with over 33 years of fishing experience, and even goes fishing on his own boat on weekends! When he catches top-quality fish, he sometimes serves them at the restaurant. You can enjoy exquisite seafood dishes made with carefully selected ingredients and freshness. It's a lovely restaurant where even the private rooms are named after crabs.

4 slices of octopus
・Boiled red shrimp: 4 pieces
4 scallops
Lettuce: appropriate amount
Red onion: appropriate amount
Mizuna (Japanese mustard greens): appropriate amount
• Cherry tomatoes: appropriate amount
・Shiso: Appropriate amount
Paprika: appropriate amount
<Dressing>
• Roasted sake: appropriate amount (use generously)
Black pepper: to taste
Olive oil: appropriate amount
Ponzu sauce: appropriate amount
・Plum meat: appropriate amount

★Recipe★
1. Arrange the vegetables loosely in the center of the bowl.

2. Top the vegetables in the center with the seafood, leaning it against them. We prepared four types of seafood this time, but one type is fine too! If you prefer milder flavors, other white fish or squid are also recommended.
4. Now, let's season it. First, pour the ponzu sauce evenly over it. Next, pour a generous amount of the main ingredient, roasted sake, over it. Finally, drizzle with olive oil.

5. Add pickled plum paste and diluted Japanese dashi broth as desired, sprinkle with black pepper, and it's ready.

This is a superb pairing of the pure and rich flavor of unfiltered sake with a tangy roasted sake dressing infused with plum flavor and seafood accented with black pepper.
And one more thing, when you think of Kappo Kamata, you think of crab dishes.「Grilled crab (single serving)」They made it for me.!

Fresh snow crab is lightly grilled until the meat is slightly plump, and then served semi-raw. The rich sweetness of the crab fills your mouth, followed by unfiltered sake is simply the best! Please come and enjoy it at our restaurant.
Now, let's review today's key points.
★★Today's Key Points!★★
1. Add chopped shiso leaves.
Tip #2: Choose lighter, less heavy seafood dishes.
Tip #3: The star of the carpaccio should be roasted sake.
