Bimi Tanrei: The Taste Yoshinogawa Pursues

Bimi Tanrei is our name for a sake profile that preserves the clean, crisp character of Niigata tanrei while delivering unmistakable pleasure from the very first sip. Refined sweetness, gentle acidity and soft umami layer together, each bringing out the others in graceful balance. A pleasant finish opens slowly on the palate, then resolves with clarity and ease. It is our traditional crispness, softened for today’s table—a new Yoshinogawa profile made to accompany everyday meals.

One Belief Behind Every Sake

Every Yoshinogawa sake is connected by one shared idea of flavor: Bimi Tanrei. It runs from our Luxury Sake, where our craft is expressed at its highest level, to our Everyday Sake, made to sit naturally at the daily table. Our Premium Sake brings new dimensions of flavor, while our Origin Sake carries forward the everyday drinking culture long loved in our region. Price and occasion may differ, but our standard of quality—and our wish to enrich everyday life—does not. One philosophy gives rise to many sakes, each with its own role.

Always Facing the Rice

Rice is the first foundation of flavor. At Yoshinogawa, we carefully select variety, growing region and polishing ratio to match the profile we want from each sake. We also grow rice ourselves, working directly in the paddies so we can feel how each year’s weather and growing conditions shape the grain. No two seasons in rice farming are the same. That is why we pay close attention to every grain and take responsibility for its journey all the way into the finished sake. This is where Bimi Tanrei begins.

The Gift of Pure Underground Water

Water makes up roughly 80% of sake and is used throughout the brewing process, making it fundamental to everything we do. Yoshinogawa draws its brewing water from Tenka Kanrosen, a well on our grounds. Snow falling on Nagaoka’s Higashiyama mountains slowly filters through the earth over many years before emerging as clear underground water. This fine, slightly soft water gives Bimi Tanrei its clean, rounded, smooth character. Our brewers receive each drop nature has nurtured and carry it into the gentle clarity that defines Yoshinogawa.

The Craftsman's Hand and the Precision of Machines

Traditional craftsmanship and advanced technology: Yoshinogawa relies on both. Our brewery is home to small-batch hand brewing, where brewers use all five senses to refine every drop, and to precise large-scale brewing supported by modern equipment, which allows us to make consistent sake for everyday life. The scale and role may differ, but both serve one purpose: to deliver sake that enriches everyday life. By bringing the strengths of people and technology together, we continue to raise quality while preserving the Yoshinogawa taste.

Sake Brewing That Keeps Evolving

Our idea of “evolution” is simple: to deliver Bimi Tanrei as close as possible to the flavor we intend. We have therefore strengthened quality control after brewing, extending rigorous management from our finest bottles to the sake people enjoy every day. Year-round brewing lets us release each sake at the right stage of freshness or maturation. Oxidation-control equipment and refrigerated bottle storage help preserve the profile our brewers designed. These investments reflect our commitment to quality all the way through the journey after brewing.

Year-Round Brewing

We want every sake—whether freshly brewed or deliberately matured—to reach customers at its best. Year-round brewing lets us plan production across the seasons, keeping fresh styles bright and lively while allowing other sakes the time they need to mature. We have also installed extensive cooling systems to maintain precise temperature and hygiene control at every stage. The result is a brewing environment in which we can express many forms of Bimi Tanrei with consistent quality, regardless of the season.

Preventing Oxidation, Protecting Flavor

Exposure to oxygen gradually changes a sake’s aroma and flavor. To deliver the Bimi Tanrei profile we intend, we needed to reduce oxidation risk throughout the process. We upgraded the taretsubo receiving vessels used after pressing and the pumps used for transfer so that the sake comes into as little contact with air as possible. We also reviewed the way sake is handled in everyday operations. By paying attention to even the smallest movements and transfers, we protect the sake’s natural aroma, flavor and clarity.

Refrigerated Bottle Storage

Refrigerated bottle storage helps limit oxidation and heat-related change, allowing sake to remain in better condition. Yoshinogawa has long stored sake this way; we have now expanded capacity to approximately 300,000 bottles (720 ml equivalent). The reason for investing at this scale is not only to protect limited high-end sake, but also to give the sake people enjoy every day the same careful quality management. Our commitment to quality is meant to reach all the way to the everyday table.
