The Sake Meter Value (nihonshu-do) is a figure based on the specific gravity of sake; generally, the higher the plus value, the drier the sake tends to be, and the more negative, the sweeter. Acidity indicates the amount of organic acids in sake, such as succinic, malic and lactic acid. However, the actual perception of sweetness, dryness, richness and lightness also depends on sugar, umami, aroma, temperature and more, so flavor cannot be judged by the Sake Meter Value alone.
